The basis of this recipe come from AllRecipes, however, I've changed it up some and it's my husband's favorite recipe to request. He has dubbed this Susie Riggies (after me!). This a creamy tomato based pasta dish that just melts in your mouth!
This is a light, flavorful side dish (or main dish) that is PERFECT for summer! The steps to salt the zucchini and tomatoes isn't mandatory but will prevent this dish from getting soggy because it eliminates all excess moisture during the cooking process. The taste will remain unchanged so it's skippable, if short on time but you may have to pick this up with a slotted spoon if skipping this step.
I'm typically not a lover of asparagus mixed with pasta but in this dish, IT ROCKS! My family appreciates a drier pasta so if yours likes things a bit saucier you may want to double the EVOO/butter to get it to your consistency. I usually love broccoli mixed in a pasta like this but the asparagus is by far the better choice!
Found this on a site called "skinny weight watchers recipes". I HATE brussel sprouts and LOVE this!! I've even gotten my kids and husband to eat brussel sprouts too! I make these at least 1-2 times per week!
This is from Cooking Light's best of 2010. This was wonderful!!! I altered this recipe to my family's tastes. This is a drier dish the way I make it. If you want it saucier, decrease the pasta or increase the tomatoes. This is great with/without crushed red peppers!! FYI...ROMANO IS KEY IN THIS RECIPE!!!
This is one of Giada's recipes. It's a recipe meant to be kid pleasing so it's mild in flavor. My little ones love this, and so do I! You can spice this up any way you want to suit your family if they don't like things mild, as the recipe intended. I sometimes add hot chicken italian sausage. I also use 1/2 pound of pasta rather than the 1 cup stated.
I cut this out of a magazine a LONG time ago and it's one of my husband and I's favorite stand-by dishes! Don't be afraid of the garlic. The roasting mellows it out. I usually add even more than stated and he and I fight over every last one of them.
