Considering my 'Zaar name, I guess I should have some Chipotle stuff posted! So here's one, from Rick Bayless 'Authentic Mexican.'

    Recipe #114091

From Rick Bayless, 'Authentic Mexican.' There's nothing like a good, fresh tomatillo sauce! Great on grilled chicken! If you want a really hot salsa, don't seed the jalapenos!

    Recipe #113852

From Rick Bayless, 'Authentic Mexican.' If you're looking for an authentic Mexican salsa, this is it! It's so simple too! I only use one onion and two jalapenos when I make it, but I decided I'd post the original recipe instead of altering it. The way I make it produces a medium heat. I'd imagine making it his way would produce a hot salsa. I really like it with the lime juice. I haven't made it with the vinegar yet.

    Recipe #113519

I made this the other day when I was trying to use up some frozen fajita vegetables. My husband begged me to write it down and make it again, since I tend to never make the same thing twice. I have put in instructions if you prefer to use fresh vegetables. I have seen a copycat recipe for Emeril's Bayou Blast cajun seasoning on this site, so if you can't find it at the store, use that. We like some kick, so if you aren't a huge fan of spice, cut the amount of Bayou Blast to taste. The leftovers were great for breakfast with scrambled eggs!

    Recipe #108016

This is fantastic chicken! My DH says it's some of the best chicken he's ever had. It is loosely based on an old crock pot recipe, but updated by removing a lot of grease (the original recipe has you add the oil that you fry the chicken in into the crock pot...yuck!), using lower fat sour cream, and adding real Asian flavors to it. Cook time is crock pot time.

    Recipe #99355

Another tasty light recipe. I skip making the wild rice and buy the pre-packaged stuff to save time and money, and it works fine.

    Recipe #98889

Quick and tasty, satisfying too! 1 chicken breast and 3/4 cup hash browns is 6 points.

    Recipe #98789

Tasty, quick, and lowfat! Who could ask for more?

    Recipe #98642

Another reduced fat family favorite. I love the creamy sauce!

    Recipe #98543

A lowfat twist on Moroccan stew. 1 cup tagine and 3/4 cups couscous is 8 points.

    Recipe #98443

A quick and tasty lowfat version of a classic. 1 1/4 cups is only 4 points!

    Recipe #98262

A distinctive filling dish full of flavor with only 4.1g fat per serving! Most of the prep and cooking are done at the same time.

    Recipe #98173

Delicious, healthful recipe that is great to go with grilled meats. Another winner from "In The Kitchen With Rosie- Oprah's Favorite Recipes."

    Recipe #98087

A good simple zucchini soup to use up all of those extra guys from the garden. Tasty served hot or cold.

    Recipe #97979

A great light summer soup. From The Cuisine of California.

    Recipe #97872

From The Cuisine of California. Goes well with stews. Cook time includes rising and baking time.

    Recipe #97734

A rich side dish that goes well with a light chicken or pork. Also tasty as an appetizer. Cooking time is cooling and chilling time. This will keep for 3 days refrigerated.

    Recipe #97681

A heavenly pot roast! The cook time includes the overnight marinating and crock pot time. Also, for those interested, one 3-oz serving of the meat and some of the potatoes and veggies is only 8 Weight Watchers points!

    Recipe #97679

A tasty cold appetizer from The Cuisine of California. It says this is great served with Chardonnay. Cooking time is marinating time.

    Recipe #97680

These are fantastic! You cannot tell that they are reduced-fat (in comparison with other enchiladas). I serve these with a generous dollop of light sour cream. Great fix for a comfort food craving!
