I made this recipe based on one of Martha Stewart's recipes. I love cranberries in baked things...the tartness of them. Delicious!! The zucchini adds a little something without being the major flavor. Hope you enjoy them as much as I have!
Note: You can substitute the applesauce with oil, I just prefer to use applesauce. Also, the cups will be quite full when you fill them, but I haven't had any trouble with them spilling over.
An easy side dish with great flavor. I love the goat cheese in this! If you want to make these ahead, chill them and reheat before serving, adding some extra liquid. Stir in the chives right before serving.
DD picked these out to make for her daddy for Valentine's Day. They weren't quite as chewy as I thought they might be...but still delicious. Perfect for the chocoholic. The dough for this can be shaped into balls and then refrigerated for up to two days or frozen for three weeks.

After reading a recipe in EveryDay with Rachael Ray, I made a few adjustments to suit what I had on hand and what we prefer and came up with this. We loved it! Its a little lighter than regular manicotti because of the crepe noodles. And they are very easy to make. Do not be intimidated by the non-use of store bought manicotti.
This recipe is quick and easy and always a hit with our family. When I first got it I thought it was too easy to be any good, but I was wrong!! The addition of pudding to this cookie keeps it extra soft.
You can also substitute vanilla pudding in place of the chocolate and chocolate chips in place of the M&M's for a great chocolate chip cookie
