This is my basic rice recipe. I like it because I can throw whatever's in the cupboard in or just make it with onion.
You can add about a 1/4 cup of any kind of veggie you like to the onions when you sauté them to add flavor. I’ve added mushrooms, carrots, broccoli, bell peppers et cetera to the onions. It can be made with cheese or without. I like to use Parmesan but have used cheddar, provolone, or mozzarella in a pinch. I find it’s creamy even without any cheese. Careful not to over salt, you’ll ruin it. Using broth made from bouillon is way too salty for me personally. Enjoy!
