    These cookies are what Christmas tastes like! This recipe makes a fairly big batch, which is perfect for sharing with friends and guests. If you like thick chewy cookies, it will make about 48. If you like them smaller or thin, it would be most practical to make a half batch, or you'll be cutting out cookies for the whole day! The prep time listed is approximate because the time involved is proportionate to the size of your cookies. You can also prepare the dough ahead of time, freeze it, then bake them later.

    This will become your go-to basic cake recipe if you think a cake [or muffins or cupcakes] should be moist and rich, leaning towards the texture of a coffee cake. If you're a chiffon and angelfood cake person then stick with your old dry recipe. The secret is vanilla yogurt. The added bonus is what the yogurt does to the nutritional profile of the cake. I don't like this cake specifically because it is "healthier" than others. It's just one of those cases where you never miss the fat! This recipe is a good start for all sorts of culinary creativity. Experiment with different mix-ins, different flavors of yogurt, and different formats. Chocolate chip cake? Blueberry muffins? Lemon-poppyseed muffins using lemon yogurt? Cinnamon-raisin-praline coffeecake? Just remember to keep the mix-ins as small as possible [mini chocolate chips, finely chopped nuts] so they don't sink in the batter. I'm telling you, it will be your go-to base for all sorts of baking!

    Ummm... Here's another recipe that I'm not so sure about any more. I got creative in the kitchen one day in Junior high. I invented it to take to a dinner at my Yacht club.     A low-calorie solution for when you're craving pizza or lasagna. I might go as far as to say I find this more satisfying than either of those dishes because it keeps the good stuff (melty goey cheese and Italian spices) without bothering with the boring crust or pasta. [Notes:] *I use fat-free Swiss cheese slices; their flavor is mild and not very Swiss-y, so when combined with the other flavors it tastes close enough to ordinary Mozzarella cheese. It can be found in most stores near the American cheese "singles" sandwich slices. *If you have the time, leave the cheese out at room temperature for an hour before making the salad. This way, when you microwave the salad, the cheese will get really melty without having to over-microwave the spinach. The spinach should be warmed and slightly wilted but nowhere near thoroughly cooked. *'s nutrition analysis is incorrect, because they're assuming this recipe uses some sort of full-fat cheese. With fat-free cheese, this comes out to about 130 calories [90 calories from the cheese, 20 calories pizza sauce, 20 calories spinach.] A plate-full of Italian comfort food at only 130 calories! Amazing!
