A quick and easy dessert recipe I came up with when I had a few not-so-ripe bananas on my hand. You can play around with different ice cream flavors if you like. For more of a "s'more" flavor, add marshmallows to the packets for the last 2 minutes and top with graham cracker crumbs instead of coconut!

    Recipe #270289

Very similar to the Indian dessert kheer. You can substitute coconut milk, almond milk or soymilk for the skim milk for different flavors!

    Recipe #271661

A quick and easy doctored cake-mix recipe that's perfect for Halloween parties and birthday parties in the fall. I've decreased the fat content by using some lower fat ingredients and the flavors are still amazing.

    Recipe #257229

Another recipe from Cascadian Farm that I'm storing here for safe keeping. Haven't tried yet but it sounds so good.

    Recipe #257282

A nice, refreshing side dish that's perfect when the weather starts to warm up. It's a great side dish for almost any grilled meat!

    Recipe #271656

This is one of Dave Lieberman's recipes that I got from the Food Network. I made them for my Superbowl party and they were a big hit! The cilantro dressing is so good.

    Recipe #257287

A fun salad created for tailgating up at Penn State!

    Recipe #257261

Another recipe I entered into the 43rd Pillsbury Bake-off that didn't make the cut (c'est la vie!). They were a hit with my friends and co-workers!

    Recipe #257917

This is a recipe from Cascadian Farm that I'm putting here for safe keeping. Haven't tried it yet, but I can't wait to try!

    Recipe #257274

This recipe comes courtesy of one of my co-workers who made them for our holiday cookie exchange. I fell in love with them and had to have the recipe. The secret is only using fresh orange rind and juice!

    Recipe #257288

A wonderfully moist and flavorful cake! This is one of my most requested cakes. I make it every St.Patrick's Day and usually add some green food coloring to make it festive!

    Recipe #220948

I clipped this recipe out of the local paper. Haven't tried it yet but it sounds really yummy and perfect for those cool fall days.

    Recipe #257279

My submission for the 2007 Cooking Light contest. A hit with those who tried it but, sadly, did not make the cut. For the salsa, I like to roast 2 ears of corn on the cob for 15 mins in the oven, then cut the kernels off. Gives it an extra level of flavor!

    Recipe #271660

I entered this recipe into the 43rd Pillsbury Bake-Off but, alas, it did not make the cut. It received rave reviews from my co-workers; some of which said they normally hate bread pudding. The key is to use fresh orange zest and juice!

    Recipe #257912

This recipe is from the Seasons of Central Pennsylvania Cookbook. I've made it numerous times and it never fails to impress. The original recipe used two loaf pans, but I found that it took much too long to bake through so I usually make it in a brownie pan. The choice is yours to make. Enjoy!

    Recipe #257271

A great meatloaf recipe that is flavorful, moist and low-fat!

    Recipe #216539

One of my friend's has celiac disease and cannot eat anything with gluten. Unfortunately for her, this usually means she cannot enjoy a lot of foods, particularly desserts, at gatherings. I made this cake with her in mind for our holiday party. It is rather time-consuming but definately worth it! The cake was rich and decadent and my friends really enjoyed it.

    Recipe #257281

My boyfriend LOVES his grandmothers stuffing recipe. As a gift to him, I got the recipe from her and made it for our holiday meal last year. He said I got it right on the nose! Note: I usually make this in 2 batches if I don't have a HUGE bowl to mix it in. The 6 bags of bread cubes may seem like a lot but it condenses a lot when mixed with the wet ingredients. It’s best to let the stuffing soak in the mix overnight but not required.

    Recipe #335260

This is a recipe I got from Ocean Spray that I tweaked a bit to reduce the fat and calories. It was a huge hit at the Thanksgiving party we had at work. Some of them still talk about how much they loved it!
