One of my friend's has celiac disease and cannot eat anything with gluten. Unfortunately for her, this usually means she cannot enjoy a lot of foods, particularly desserts, at gatherings. I made this cake with her in mind for our holiday party. It is rather time-consuming but definately worth it! The cake was rich and decadent and my friends really enjoyed it.

My boyfriend LOVES his grandmothers stuffing recipe. As a gift to him, I got the recipe from her and made it for our holiday meal last year. He said I got it right on the nose! Note: I usually make this in 2 batches if I don't have a HUGE bowl to mix it in. The 6 bags of bread cubes may seem like a lot but it condenses a lot when mixed with the wet ingredients. It’s best to let the stuffing soak in the mix overnight but not required.
My submission for the 2007 Cooking Light contest. A hit with those who tried it but, sadly, did not make the cut. For the salsa, I like to roast 2 ears of corn on the cob for 15 mins in the oven, then cut the kernels off. Gives it an extra level of flavor!
This is a recipe I got from Ocean Spray that I tweaked a bit to reduce the fat and calories. It was a huge hit at the Thanksgiving party we had at work. Some of them still talk about how much they loved it!
This recipe is from the Seasons of Central Pennsylvania Cookbook. I've made it numerous times and it never fails to impress. The original recipe used two loaf pans, but I found that it took much too long to bake through so I usually make it in a brownie pan. The choice is yours to make. Enjoy!
A quick and easy dessert recipe I came up with when I had a few not-so-ripe bananas on my hand. You can play around with different ice cream flavors if you like. For more of a "s'more" flavor, add marshmallows to the packets for the last 2 minutes and top with graham cracker crumbs instead of coconut!
