Another ZWT III submission. This is a great recipe from The Essential Vegetarian Cookbook. These little guys are great, I serve them with crusty bread so you can spread the fried cheese all over the bread.
A very good Tex-Mex casserole posted for ZWT III. This can be varied, I have made it with an extra layer of refried beans, you can leave out the beans or the corn or the chilies, you could add different kinds of vegetables or beans, really the possibilities are endless. Very tasty!
Another ZWT III recipe. A nice substitute for the beef dish whether you're a vegetarian or not. This is an adaptation from another one of those 1,000 Vegetarian Recipes. This is a very hearty and filling dish.
Posted for ZWT III from my all time favorite cookbook 1,000 Vegetarian Recipes. I love this dish, it's so easy to make, it gets better if you keep it in your fridge for a couple days, and it is so flavorful.
Posted for ZWT III, this a Southwestern dessert from 1,000 Vegetarian Recipes. This is a super easy way to dress up fruit for a quick dessert, and it will work with almost any kind of fruit that is fleshy enough to broil. I particularly like it over melon like honeydew. I am not a big fan of desserts, but this one is actually really really good and so versatile.
This is a very easy and very tasty way to make stuffed mushrooms as an appetizer. It's so easy that I actually got the recipe because a friend of mine made them on a camping trip...if you can make them in the wilderness just imagine how easy they are in your kitchen.
This is my mom's take on a sandwich that is served at Steak Escape. She used to make these as a quck mid-week dinner. Can't eat them anymore cuz I'm a veggie, but there's no reason YOU shouldn't enjoy this!
I came up with this the first time I purchased an ahi tuna steak to make at home. For me, less is more when it comes to ahi because I really love the flavor of the fish. This recipe is super easy and it makes a great presentation over a baby spinach salad.
Adapted from a cookbook called Flavoring with Herbs, this is a great recipe for stuffed onions, but ONLY if you really like onions. The presentation of them is amazing, and they can be used as a side dish to any main course, or as a vegetarian main dish (that's what we do!)
This pasta makes a beautiful presentation with the fresh tomatoes and baby spinach. The name means red and green pasta, and it's appropriate. I got this from my mother-in-law in an e-mail, but I have no clue where she found it. Easy to make, great dish for a week night when you don't really feel like cooking an involved meal, but you still want to eat something a little classy.
Portabella mushrooms with goat cheese and spinach in a warm wrap. Makes an excellent lunch. Can be served warm or cold but I prefer to warm the wrap and the mushrooms because the combination of the hot and the cold along with the flavors is excellent.
