    This is one of my favorite Rachael Ray recipe's. I've posted it just as she has it listed, but I don't use onions because my honey is allergic to them. The thing that attracted me to this recipe was the Balsamic mayo, and it is indeed delicious. I've also use the mayo on grilled chicken breast sandwiches as well. Also, instead of swiss cheese, I use horseradish cheddar cheese, it is delicious!

    This is a great meal on a hot summer night. Tasty, easy to make, no oven required, just sear the shrimp and sauté the veggies and your done. You can do this earlier in the day, then throw it all together for dinner, or even a nice afternoon lunch. You can also switch out the shrimp and use chicken or scallops as well. Or double the recipe and use several choices for even more variety!

    We love soup and it's such an easy meal to make and healthy too! I had read numerous recipes regarding lentil soup and took what I learned from them, added my own touch and came out with this. It was outstanding! Served with some sourdough bread and it was all that was needed for a very filling meal. You can leave out the chili powder if you don't like it spicy, or add more if you do! This was thick and stew-like, if you like it a little more soupy you can add more stock to it. I always make my soup a day ahead of when we plan to have it for our meal. It always tastes better when it had time for all the flavors to meld together.

    We love lime and I use it in a lot of things instead of lemon. It adds a unique and delicious flavor. Use more of less poppyseeds as you desire. Serve with steamed broccoli and a salad.

    The blend of flavors in this recipe is amazing. I use a creamy blue cheese made by Rosenborg that has little pieces of pear in it, but you can use any blue cheese that you prefer. Make sure you thin out the chicken breast as much as possible and don't stuff them too much of you won't be able to fold them over. When you secure the chicken breasts, be sure not to leave too much of an opening, or your mixture will leak out in the oven. I served this for Valentine's Day Dinner, along with a delicious salad from another Recipe Zaar member and asparagus and couscous.
