My kids love this yummy, fresh salad, with it's crunchy vegetables and the sweetness of the green apple. Best made just before serving, or the mushrooms will start to get soggy, and the apple will turn brown. My kids prefer it without dressing, but you could use a vinegarette, or a lemon yoghurt dressing if you prefer. This recipe serves 2 as a side dish.

I came up with this recipe to use up some calamari I had in the freezer. It's great on it's own, or as a topping for steak.

I came up with this as a quick and easy lunch today. It was tasty, and used no added fats or oils. I used my wok as it is the best non-stick surface I have. Feel free to use any good non-stick pan you have. You could use this on it's own, in a salad, tossed through pasta, or as a topping for grilled steak.

This comes from Manu Feildel's cookbook, Manu's French Kitchen. The cooking time will vary, depending on your oven. Keep an eye on the eggs, and take them out when the cream mixture is bubbling hot, and the eggs are just set in the middle! You can add ham or salami, and you can replace the spinach with any other green vegetable.

These are SO good! They make a really nice casual dinner, and are a fantastic wrap to take for lunch (fold both ends in before rolling if taking in a lunchbox.) I use Roast Shredded Beef ( Recipe #457009 ) and Honey Mustard Mayonnaise ( Recipe #460263 ). My whole family love them! We use sun-dried tomato flavoured tortillas, and they really add to th eflavour, but if you can't get them, just use regular ones. The measurements for the filling are approximate, basically just sprinkle small amounts on, to your own tastes.
