    This salad can be served as a main dish--it has a combination of grains, legumes, nuts, and seeds to provide complete proteins--or as a side dish. It is a versatile dish, too. You could easily swap out various ingredients to adjust it to your taste. For example, you could swap oranges for limes, rice for wheat berries, lentils for beans, parsley for cilantro, or roasted sweet potatoes for beets.

    I love macaroni and cheese. It's homey, comforting, delicious, and versatile. I love this mac and cheese recipe because in addition to being cream and soul-satisfying as all mac and cheese should be, it is also incredibly easy to prepare and lower calorie.     This dish is comforting and delicious, compliments pretty much any main course, and would also be a good dish for a brunch buffet. I made this up one evening when I needed a vegetable side dish, and it was so good I plan to continue making it for years to come! A good way to describe this dish is a healthier, more vegetable-y version of your favorite cream of celery soup in side dish form! So, tweak the recipe to adjust it to your tastes and what you have on hand, and enjoy!

    I begin to turn to soup when the weather outside turns a bit crisp, and I keep right on making and eating hearty, healthy, warming soups all winter long. This is an adaptable soup. Instead of the swiss chard, you could substitute any dark greens (spinach, turnip tops, radish tops, mustard greens, etc.). You could also substitute beans and/or rice for the potato; add fall veggies like sweet potatoes or squash; etc. Unless you're veggie, don't leave out the bacon. Smoked, cured pork products paired with leafy greens are one of life's simple luxuries.

    Salata De Vinete, or Eggplant Salad, is a common salad in many parts of Romania. Similar salads exist throughout Eastern and Southern Europe.
