    It is important that you use a good quality fresh cheese and grate it yourself - do not use the ready grated cheese for this recipe. I serve this with crisp crunchy rolls & a fresh green salad Great lunch or dinner

    Long slow cookingalong with the bastings is the secret to producing a moist duck with all the fat cooked off the bird. It is one of my favorite recipes for duck. You can save the grease to use another time - the flavor increases but I have never done this and am leary of reusing fat. You can do this recipe using just salt & pepper instead of Tony Chachere but it is not as good

    This is a neat way to use up some of that leftover turkey Use more than 6 oz of turkey if you wish. Substitute ham, chicken or leftover roast for the turkey I like to use Aged Cheddar for more flavor.

    This recipe travels well! Bake it first reheat in a moderate oven. It can be stored in the fridge for up to two days. I like to put "Baker's helper " sheet (layered aluminum sheet to prevent burning) under the pie plate. When you put in the layers of potatoes take your time and do it artistically so the top layer looks attractive with the swirl of potatoes. This is very attractive and I love the combination of Leeks with the two types of potatoes

    This is a slightly different dressing - I like it with Cornish hens too. You may also bake it separately from the turkey 350F for apprx 45 minutes -. If you like a moister dressing add more chicken broth

    I like to heat the Tostado shells for apprx 10 minutes in a 325f oven or until they are golden. You can make them Vegetarian too - I have used Mexican veggie ground and made a guacamole to go on instead of slices - Even use a tofu cheese if you wish. Use any type of meat that you wish instead of the chicken - These tostados are fun to serve for a gang watching sports or after skating etc etc. Takes minutes in the final preparation. The cook time is the time to heat the already prepared beans and chicken

    I opened the fridge, looked at the leeks in the garden and threw this stir fry together. It went over well so I thought I would post it. The colored sweet peppers are just to add a bit of color but they do add flavor so include them even if you only use green. Bragg that is mentioned as an option to Soy sauce is low sodium Soy sauce and can be purchased in Health food stores and some grocery stores

    Yogurt cheese is a wonderful substituion for butter or margerine on crackers, bread etc.(Look at the calories) I love this herbed version on crostini, garnish with some parsley. It will keep in the fridge for up to a week. Use it plain or add your own favorite ingredients. No Fat yogurt works well - Make sure that the yogurt you use does not have geletin in it or it won't work.

    I love this bean recipe it looks good and tastes very good! I love beans still quite crisp but if you like them well done it's your call! The touch of cardamom gives a slightly mysterious flavor hint. For a Vegetarian version use vegetable stock
