    I serve this on special occasions. You may be able to substitute white potatoes, but with the Italian Fontina I prefer this with unpeeled red potatoes.

    Easy, meatless meal or an appetizer/snack/salade for more. I like to top them with a cheese slice then broil till lightly browned. Prep time includes 20 minutes to prepare - salt, drain and blot the eggplant slices. You can peel the eggplant though I don't find it bitter.

    We use this spread on bagels, toast, tortilla roll ups and for sandwiches. Since applesauces / apple butter and peanut butter vary by brands you'll have to adjust for the differences regionally. This recipe is presented as a spread, though you can adjust the amounts and use it as a dip.

    I've tried other brands of Lemon - Lime soda / pop. For us the Slice brand is more pronounced in flavouring than most for this copy. I use a dropper for the Coconut extract for just a hint of the flavouring.

    Easy to prepare chicken, please adjust seasonings amount to your tastes. I serve this over brown rice or pasta. It also makes a good sandwich on toasted buns lightly smeared with garlic butter and fresh basil.

    Yummy snack with the sweetness of chocolate, the crunch and salt of the pretzels and the zing of the cayenne. I also use the peanut butter filled pretzels for the creaminess of the peanut butter. Awesome snack, they never last long. The cook time is one hour chill time. Adjust the Cayenne for more kick. Be careful not to burn the chocolate, stir well each time while cooking.
