My Mom got this recipe from a chef around 20 years ago, and we have been making it since. It's divine! Not a creamy dressing, rather more of a vinaigrette Caesar.
* Edited per Boomette's review to reduce the garlic - I forget that DH and I are garlic fiends and use copious amounts of garlic. Thanks for the feedback, Boomette! Original amount was 8 cloves, reduced to four.
An awesome, full of flavour, vegetarian soup! Roasting the onions adds a rich flavour. *Recipe modified 13-Apr-09* I realized after Tea Jenny's review that I messed up the ingredients and forgot the thyme, the wine said 1 tbsp instead of 1 cup, and the soy sauce was missing completely - no doubt it didn't turn out well! The recipe has been adjusted and is now correct.
I'm famous for my Minestrone and here's the recipe--it's vegetarian and very good.
Feel free to sub vegetable stock for the homemade stock - but if you have time and the ingredients, make the stock homemade - it's so much better that way! You'd need about 8 cups of broth.
An awesome vegetarian chili I found on another site and modified quite a bit. It can be made in the crock pot, if you have a large one, or on the stove, otherwise. Very little work, but a lot of taste!
I used to order this all the time at the Red Devil Restaurant, but then it was taken off the menu. They gave me the ingredients, though, and I came up with this incredibly yummy spicy bruschetta.
