    Family recipe handed down. Every time I make this for a gathering, I am asked for the recipe by everyone!! Use only the freshest tomatoes for this, if you can get true "Hanover" tomatoes you'll love this even more! What a way to use all those summer tomatoes, yummm!!! Even better the second day....if there is any left!

    Recipe from package of pork chops.Prep time does not include marinating time. You can alternately use dried chipotle, just rehydrate in hot water for about 15 mins and then chop. I actually like this better as a marinade for pork tenderloin.

    This is recipe I pried out of chef at a favorite restaurant when he took this off the menu. Now I don't have to specially request! : ) Please note that amounts are approximate as are types of seafood; change to your liking. Don't forget to make garlic bread to sop up the juices! **Sometimes I also like to sub tarragon for basil, but be sure you like the flavor of tarragon before you do this!

    I was hungry for salmon patties, wanted something fresh tasting and healthy. Was also hungry for cilantro. This is what I came up with, it will be my only way to cook canned salmon from now on...hope you enjoy! *Note: the amounts for onion, peppers and herbs are approximate. I typically use more of all and especially more sriracha...use your discretion!

    This is more of a tip than a recipe....I love to grill on cedar planks, but hate to take the time to soak the planks - this makes the delicious art of grilling on a plank available in an instant! Just remember to leave plank on grill for 3 mins and flip before placing food on it!

    This is the simplest and most delicious recipe I've found for scallops...the flavors of the plank are perfect for the tender scallops, adjust cooking time according to size of your scallops. Somtimes I also like to place fresh sprigs of herbs on plank under scallops to add a different dimension of flavor.

    If you are looking for the "creamiest" creamed soup, don't go here...If you're looking for a satisfying "cream-style" soup that fits the Weight Watcher's plan, this works! I developed this when i couldn't find a soup that satisfied my desire for creaminess and was within my limited WW points. Hope you enjoy. **Note: I "estimate" amounts of all vegetables, based on what I have on hand. More or less of anything won't hurt, but don't skimp on potatoes, they play a major role in the body of the soup. Points noted allows for 1 1/2 large baking potato. I've also estimated timing, as I typically get the soup "done" and then let it simmer on WARM for a while to allow the flavors to develop. Hope you enjoy!

    Oh, yum! My version of Trader Joe's. I was down to my last bag of TJ's Lime Pilaf and dreaded the long (2hr) drive for more. Decided to try to recreate, this is what I came up with.     This is my favorite risotto recipe, a very earthy, filling dish that works well as a meal itself, but also great as an opening dish or heavy side. Please don't be put off by the ingredients or seemingly lengthy instructions, it is well worth the effort! Please note that the ingredients are key to the total taste of this dish. Try as is before making substitutions, I'm sure you won't be disappointed!

    I know this isn't actually a "recipe", but I love to cook with wine, but I absolutely hate to waste good wine, and absolutely hate to use bad wine for cooking. This method enables me to save that wine for future recipes and to add those "not quite a glass" leftovers from the good stuff to assure a continual supply of cooking wine!

    My recent kitchen fire has caused me to become much more creative with my cooking. After a few weeks of grill and crock-pot recipes, I discovered I had a fondue pot! I also discovered that fondue cooking is an art, an adventure. Following is my attempt to recreate what I consider to be one of my fav's that will be made again and again!     This is a recipe I came up with the other evening to satisfy my craving for comfort food. I needed a one-dish meal, as my crock-pot is the only cooking apparatus I have left after kitchen fire. Great for getting your veggies without extra work or dishes (I love to use spinach and mushrooms whenever I can!). Makes fantastic sandwiches next day (also makes yummy meatballs!)
