I came up with this one on the fly when I was a cook at a golf club to use as a daily special. It quickly became a customer favorite! Very simple to make and very tasty. Can also be used as a main course, without the bun, or on top of spaghetti. I also used to lightly toast the kaiser rolls in the oven for a little something extra!
Got this one from Taste of Home magazine. Super quick, easy and inexpensive, as well as delicious. Great for summer, because you don't even have to touch the stove! Has become my signature dish for picnics and parties... my friends demand it! Feel free to add or leave out ingredients as you see fit. I leave out the green chilies, or substitute jalapenos. I also use lime juice instead of lemon and add some salt and pepper to the avocado.
This is a copy cat of a sandwich on Eat N Park's menu, one of my favorites! Very quick and easy. Substitute low fat cheese for a healthier version. Also good without the bun for a main course, served with Spanish rice. I use my George Foreman grill to cook the chicken, but you can use an outdoor grill or skillet.
