This is taken from a posting on the Dole Foods website. I have eaten this before and it really is good and very easy to prepare. An Angel Food cake is easy to bake if you choose. This recipe can easily be modified to low sugar too by purchasing those ingredients. Great summer time treat!

This was the recipe of the day on the RealAge website. Great salads don't have to be just a summer thing and this one seems perfect for fall and winter. The cheddar cheese and pecan pieces, along with giving you some calcium and protein, complement the pear and celery flavors nicely. (Or you can try parmesan cheese and toasted walnuts for an Italian twist.)
The wonder natural flavors of the salmon and the vegetables make this a one pot meal. My family loves wholegrain rice and it is a great complement to this dish and really is all you need to make a full meal! Enjoy!
I love this recipe and was surprised to not find it on Recipezaar! What makes it so different is the red wine vinegar. It makes such a colorful presentation and is good all seasons of the year! The dish is alway cleaned before it leaves the table! Enjoy! Note about bacon: I use Hormel Real Crumbled Bacon from a bag to save on prep and it is just as good.
