    South African green beans are one traditional food that bring good things to life. Nourishing, colorful, and just darn tasty too. I serve mine cold with a dash of hot pepper flakes that just give it that zing! And if anyone knows me, even if you don't know me well, you know that I would always go for the hot pepper flake option. Lawdy, I am one hot farmer. Either way, enjoy as we travel across South Africa...the land appears so much like the Longmeadow that I just feel completely and utterly in love with these beans. I hope you do too.

    Eggplant Extraordiare With Garlic and Love (Melanzane Al Forno)

    You say aubergine, and you think garlic. At least I do. Those two are meant to go together like a ball and a bat. You add some might fresh tomatoes, fresh parsley, and I'm not sure what could be better in the world then sitting down with a dish of this on your lap as you contemplate the previous mornings happenings. I could eat two servings, but hold off....you never know who will show up at the door and want some.

    I do have another love. I have to admit it, but it's the mighty cucumber. I literally could wile away hours eating and devouring sliced cucumbers in all kinds of ways. However, my favorite would always include two other magnificent ingredients that get me dancing just like our cattle. The addition of red pimento peppers and wonderfully fresh, good cream cheese. Slice em' and put them on a nice, fresh, slice of country bread...and I promise you will want to fly straight to Guatemala.

    The tops of radishes had just poked through the soil, and now I know those bright red radishes are ready for the picking. My FIL was a lovely soul from the Caribbean, and served this lovely, sparkling, nutritious radish salad for a bit of a palette cleansing, and also aside "frijoles con arroz", which was a perfect compliment to this dish. Best if using fresh radishes from your garden, or the farmers market, because the crispness exudes through. You might just want to eat a radish naked (the radish naked... not you, although, if you wanted to do both naked - it's ok and doesn't effect the taste in any way.)

    Based on Rachel Ray's 29 3/4 minute recipe. I mean loosely based. Served for Cinco de mayo, and man...the flocks came. It is not hard. I promise you. Feel free to make the flank steak by itself, or the shrimp rice, or even the tomato salad. It's really a whole menu all in one. We love it, here on the farm when the Spring is starting, and a promise of a lovely summer is on the way. Either way, you will be mighty pleased.

    Delightfully Sparkly Peach Pie Longmeadow Farm

    Dad commented the other day, "Was I getting all the peaches off the tree and using them?" On the farm we have brand new peach trees. We planted them two years ago, and just this summer (earlier this Spring to be exact) produced a overabundance of peaches. So many so, that the young tree bent over it's branches almost in half and dipped the ends towards the earth below it. I mean a lot of peaches. Perhaps if I were to count; there would be well over 200 peaches on this little tree. Darn this tree has really worked it's heart out producing these peaches. So what to do? Grab them off, and bake a pie of course! This little pie has gone to neighbors all over the country-side. It was told to me, that it makes you just feel good inside. Enjoy the warmth, the aroma, and a revisit to the past when things were done slower, and enjoyed more. And let the peach drip right down the front of your shirt. No one will notice. Love from the farm....

    Gurkensalat from the Farm - the Little Cuke Salad from Germany

    "Gurkensalat" is a German stand-by. I have been eating this little salad since I was knee-high-to-a-grasshopper. The trick to this salad is 1. really getting the water out of the cucumber by salting the cucumbers and letting sit in a colander for 20 minutes to delete excess water. 2. I use fresh chives from the garden, and make sure my cucumbers are already cold before adding sour cream.

    Awww...fresh spinach..how could anyone go wrong eating this delicious leafy veg? Just so good, I could eat them plain, maybe dipped in some hot sauce. (I know, I know!) Scatter mung beans on several layers of dampish paper towel on a little plate. Keep moist, in a warm place and the beautiful beans will sprout in a matter of days.
