    This is not an authentic Asian curry recipe (especially if you use the optional brandy!). I just made it up as I went along, adding what needed using, but the result was so good, I thought I'd share it.

    I stumbled on this idea when, just before my weekly shop, I was searching around for what was left in the fridge for a quick lunch. It would also be good for a breakfust, brunch or teatime snack. It really brings out the flavour in the baby corn cobs.

    This is my version of a traditional English favourite. It’s wonderful to come home to on a cold winter’s day. It is best made with home-cooked ham, so that you can use chunky pieces and boil up the bones for a delicious flavour that you cannot get from a stock cube! Also, you’ll get great value and no waste from your ham joint. A bacon joint would make an ideal substitute for the ham, but go easy on the salt when seasoning!

To reduce the calories further, use a low calorie sugar and reduce the amount according to the directions on the packet. You can also relieve your conscience by serving it with fruit and/or a lowfat ice cream. Try it with pears and vanilla ice cream for a delicious Poire Hélène. Scrumptious!

    This soup is ideal for a lunch or supper on a cold day. All you need with it is some nice crusty bread. The lentils will thicken it, so no messing about with flour and much healthier! It will serve 3 or 4 as a main course or 6 as a starter for a dinner.
