    Fabulous summertime treat - I prefer to serve mine in martini glass. For a non-alcoholic version, substitute the vodka for diet sprite or 7-up.

    This is a perfect warm-weather salad - really fast and easy so you can get out of the kitchen and outside! Try as a quick weeknight side with your favorite grilled meat. I came up with this one night when I needed something to go along with some fresh tilapia fillets. Threw some stuff together that was in the fridge and voila! Red cabbage, in particular, is a great source of phytonutrients and antioxidant polyphenols (protect brain cells). All cabbage tends to be fairly inexpensive and has many health benefits.

If you can't find pepperjack cheese, I'd recommend sharp cheddar. And for a crispier crust, lightly toast the pita before adding toppings. **I like to pre-chop vegetables and freeze them for recipes like this. It's easier prep and you don't have to worry about them getting old before you can use them all!

    This gem was found while browsing through my great-grandma's recipe box. I slightly reduce the sugar when I make it and sometimes add toasted slivered almonds. Best if made a day before, but not necessary to do so.

    I've thrown this recipe together for dinner the past 3 nights, and it's delicious every time. So it's zaar worthy now! It's great for those nights you don't get home from work until way past dinner time since it's so easy. I'm sure you could use a tortilla or actual pizza crust or whatever you want in place of the flatbread wrap. That's just what I happened to have on hand. I think it also would taste pretty great with a few tomato slices added on top. Enjoy!

    This is an incredibly easy snack recipe that I learned back in 7th grade Home Ec. Good for kids, dorm cooking, movie nite, or any quick fix. It's also a great one to make with kids because they can help with the entire process or make it themselves if they're older. You can always split up the Italian seasoning or add more toppings if you need more "jobs" for your cooks! For easier and safer cutting, they can use kitchen scissors. I don't like pepperoni so I always replace it with mushrooms or peppers.

    My most requested party snack! Easily made and easily doubled! If you prefer mild salsa, only use 1 jalapeno and/or do not add the seeds. Prep time does not include chill time. If you don't chill it overnight, the flavors won't mix and it won't be very juicy(although it still tastes great). *TIP* Use scissors instead of a knife for the cilantro, it's MUCH easier!

    I came up with this in an attempt to 'jazz-up' my regular no bake cheesecake dessert. It evolved into something completely wonderful! It looks very classy served in martini glasses for a dinner party, or you can make a ton of mini-fluffs and keep in the freezor for a quick fix to those sweets cravings. Low fat sour cream and cream cheese are fine, but I would recommend regular whipped cream for best results. NOTE: if it becomes liquidy at any time while you're mixing, simply chill for a bit before continuing. This will tend to happen in hot/humid weather or if you use reduced fat sour cream or cream cheese.

    I love gumbo, but always end up picking it all apart because I don't like the meats that are typically included. This one is vegetarian and surprisingly easy! For the sausage links, I prefer boca and morningstar farms products. Serve with hot sauce on the side. -- discovered on Whole Foods' website.

    Fresh strawberries tossed with balsamic and honey, poured over homemade biscuits and topped with whipped cream. Absolutely decadent! Make sure to have all the ingredients well chilled before beginning. NOTE: I have tested this recipe subbing baking-mix or fridge biscuits, subbing pre-whipped cream, and subbing frozen strawberries. It will work successfully, however the results do not compare to making it 'correctly'.
