This recipe was passed down to me from my Greek aunt. Traditionally the bread was made exclusively for Easter celebrations and had red-dyed hard boiled eggs nestled in the braids of the loaf. Nowadays the bread is popular at breakfast and is served all year round, without the hard boiled eggs.
Great way to prepare any kind of muffins. Typical favorites have been blueberry, strawberry, cranberry, or a combination. They are not greasy or overly sweet, nor are they too dry. Uses lots of healthy alternative ingredients. I have been asked for this recipe everytime I make them. Depending on the fruit, you can also add 1/2 tsp cinnamon to the batter.
Reworked a family rhubarb cake recipe to fit the fall season. Has been room-mate-approved as the best cake to hit the household.
Note: chopped nuts or crushed cereal can substituted for the oats in the topping.
