    Fruit Dip
    Handle
    1 Reviews |  By ellie_

This sounds like a good fruit dip, though not low in calores, however you can lower the calorie/fat count by using low fat cream cheese, light sour cream and light Cool Whip. Even Splenda Brown sugar would probally work out equally well. Use with your favorite seasonal fruit - some of my favorites are apple slices, grapes, stawberries and pineapple chunks. Chill time (4 hours) is not included in prep time. Recipe source: Southern Living

This grilled chicken recipe is a nice change from the usual grilled chicken. Although the recipe says to serve it over green chili sauce, I think it will also be great with rice and a green beans or brocolli. Recipe source: Coyote Cafe

I was looking for an interesting salad to go with some Asian marinated fish skewers and this was wonderful. When I made it I skipped the salad greens and bean sprouts (the grocery stores were totally out of bean sprouts!!!) and served the Asian tuna skewers on the salad -- delish! If following the WW flex plan this is 6 points per serving (without the grilled tuna). Recipe source: Great Cooking Every Day.

    Ww Basil Lemonade

    1 Reviews |  By ellie_

This is an alternative to diet sodas and iced tea and is easy to make - the basil does have a 30 minute sitting time though and it's better if it's made early in the day so the lemonade is very cold. If following the WW flex plan this is only 2 points/cup, but I imagine this would also work with no cal sweeteners which will then will 0 points. Recipe source: WWM (July 2007)

    Asian Chicken Noodle Salad
    Handle
    2 Reviews |  By ellie_

This is the first time I ever used rice noodles (sold as Thai stir-fry rice noodles) and really liked them. By the way the original recipes suggested using rotisserie chicken but I didn't have any so put some teriyaki sauce on some boneless chicken tenders (chicken breasts) and broiled them. This salad also goes together in no time at all. I figured if following the WW flex plan this is about 8 points - which is pretty good for dinner with fruit for dessert. If you include the wonton crisps (included below) add another point or so. Game plan: (if you already have the cooked chicken), (1) make noodles, (2) prepare dressing, (3) Preheat oven for wonton crisps, (4) cut and season wonton wrappers, (5) chop vegetables (or take the shortcut and buy carrots and green peppers already cut up and cut remaining veggies), (6) bake wonton crips and prepare salad -- dinner is done in well under 30 minutes! I am always looking for bread to go with an Asian meal and although this is quite labor intensive it seems like a fun project to have with a very special Asian meal. This recipe uses both your bread machine and rice cooker - you will also need tiered baskets for your rice cooker (a large rice cooker is necessary - at least 10 cup). As this is steamed as opposed to baked bread there is no crust and the rolls are white (instead of browned) -- best if you use the bleached white flour for ultra white rolls too. This salmon is delicious and so easy! We had it with fingerling potatoes (also cooked on the grill) and tomato salad for a wonderful summer supper. This recipe can easily be adjusted to the amount of salmon or to the number you are serving. Recipe source: Bon Appetit (August 2007)
