My kids went ga-ga for these easy popsicles. Three simple ingredients = 15 minutes of quiet time as they enjoyed their frozen, summer treat. :)

    Recipe #503361

This is my new favorite frozen summertime treat. This recipe is easy, requires no cooking and cooling of the blueberries and yields a smooth and velvety sherbet packed with fresh, natural blueberry flavor. "Preparation Time" includes time needed to churn in an ice cream maker as well as time needed to cure in the freezer.

    Recipe #503337

This intense raspberry sorbet is as pleasing to the taste buds as it is for the eye to behold. Please note "Preparation Time" includes time needed for the simple syrup to chill, time needed for the sorbet to churn in an ice cream maker as well time needed for freezing solid. If you are as eager as my family was to eat this sorbet, you may choose to serve it directly after churning without freezing for 3-5 hours, but please be aware that the sorbet will be softer and melt much faster. I hope you enjoy this recipe as much as my family does! Happy eating!

    Recipe #503320

These popsicles are easy to make as well as healthy. They contain fresh, raw black cherries and only two other ingredients: lime juice is added as a flavor enhancer, and honey for a touch of sweetness. Kids of all ages will enjoy these refreshing, fuschia gems! (Note: Cooking time includes time needed for the popsicles to freeze solid).

    Recipe #503316

I made these trifles from fresh berries that my family picked. They consist of layers of poundcake, berries, lemon cream and are topped with toasted almonds. What a light, refreshing dessert on a hot summer's day!

    Recipe #503086

When my mom or I make her version of pasta salad, we always get rave reviews. We like it because it differs from typical pasta salad in that it uses smoked Keilbasa sausage, colby-jack cheese, cheddar cheese, lots of veggies and parmesan-Italian dressing that ties it all together. Now don't get me wrong. I enjoy many types of pasta salad, but truth be told, Mom's version will always be #1 in my book. :)

    Recipe #502990

If you're looking for a fun and tasty way to cook up a bounty of peaches, why not serve them for breakfast? I had a bag of ripe peaches and wanted to use them before they spoiled, so this idea came to mind. It turns out that it proved to be a successful experiment. These pancakes contain the gentle flavor of cinnamon, nutmeg and vanilla and are topped with warm, saucy cinnamon-nutmeg spiced peaches. As my daughter says, "Deeeeelicious!"

    Recipe #502969

This is an easy, delicious quesadilla recipe that is not only sure to please the kiddos but the adults as well. I prefer the fold-in-half method of quesadilla assembly for ease of turning in the skillet with less risk of the innards spilling out. This recipe calls for whole wheat tortillas, but corn or another variety of tortilla could be substituted. Also, I prefer to bake the chicken cutlets in barbecue sauce, but they could also be marinated and grilled (just be sure to have extra barbecue sauce on hand for quesadilla assembly!). My kiddos want ga-ga over these quesadillas, and I hope you enjoy them too. :)

    Recipe #501983

This recipe was adapted from "Taste of the South Magazine 2006". I made this for my husband's birthday, and it was a hit with both adults and kids. This cake has alternating layers of butter cake, vanilla ice cream, cinnamon-caramel sauce, toasted pecans and is topped with bananas in cinnamon-caramel sauce. This is a decadent dessert that takes time to prepare but is so worth every minute. (Note: Preparation time includes time needed for cakes to cool and ice cream to harden between layers and atop the cake.)

    Recipe #501870

These are not your typical "fish sticks". They taste so much better than the processed frozen variety, plus there are no preservatives or artificial ingredients! These Tilapia Sticks turn out moist on the inside and delightfully crispy on the outside and are sure to please both parents and kids. Serve as-is or with your choice of dipping sauce.

    Recipe #501786

I confess to making breakfast for dinner for my family at least once a week, and I do not feel one ounce of guilt about it. :) This recipe is by far their favorite. These pancakes are lightly almond-flavored with juicy, bursting warm blueberries. Garnishing with cinnamon-toasted almonds adds a nice crunch and depth of flavor.

    Recipe #501783

After seeing this idea floating around the web, I thought I'd experiment a little. Three simple ingredients, no sugar added, no ice cream machine needed... How much healthier and easier could it get? This "ice cream" is smooth like soft serve and naturally sweet. Plus it has the potential for so many add-ins (dark chocolate chips, chopped strawberries, nuts... just to name a few). Please note "Cooking Time" includes time needed to cure in the freezer. If you are as excited as my 4-year-old was to eat this "ice cream", you may choose to serve it directly after turning out of the food processor instead of freezing for 2-4 hours, but please be aware that it will be soft and melt much faster. My daughter, the best taste-tester around, approves, and I hope you do too!

    Recipe #501253

This is the easiest sorbet recipe ever. This differs from traditional sorbet recipes, as it doesn't include simple syrup. Honestly, I didn't have time to make simple syrup from scratch. It would have required way too long to chill to the appropriate temperature. I instead used a mixture of ice-cold water, lemon juice, confectionery sugar and almond extract. "Cooking Time" includes time needed to churn in an ice cream maker as well as time needed to cure in the freezer. If you are as eager as I was to eat this sorbet, you may choose to serve it directly after churning without freezing for 2-4 hours, but please be aware that the sorbet will be soft and melt faster. I hope you enjoy this recipe as much as my family! Happy eating!

    Recipe #501247

You might be asking yourself, "Chocolate for breakfast? What!" The kids and I were in the mood to play mad scientist in the kitchen, and the end result was this delicious recipe. We took a basic pancake batter recipe and added cocoa powder and a little more sugar to balance out the bitter unsweetened cocoa. Then we added walnuts, white chocolate chips and semi-sweet chocolate chips to the freshly-poured pancake batter. Serve hot with warm maple syrup, and there you have it--chocolate for breakfast.

    Recipe #501081

Sweet, moist and reminiscent of apple pie flavor, these pancakes are like eating dessert for breakfast. Serve hot with butter, maple syrup or warm apple topping for a hearty treat.

    Recipe #500391

This is a simple, delicious alternative to regular maple syrup or the store-bought artificially-flavored variety. Serve warm over French toast, waffles or pancakes. My munchkins give it four thumbs up, and I hope you enjoy it too!

    Recipe #500261

These cupcakes contain all the flavors of a caramel-dipped apple with the loving touch of apple pie spices and salted caramel. These cupcakes are moist with tender pieces of apple nestled inside, then topped with a velvety salted caramel buttercream frosting. Decadent, delightful and definitely worth sharing the calories with your friends and family!

    Recipe #500101

These cookies are so simple--only 5 ingredients! The best part is they are healthy! They turn out moist, chewy and full of pumpkin and spices. My family likes them as a snack or even for breakfast, and I hope yours does too! (Note #1: These cookies are best enjoyed fresh--meaning within the first day or two of being made. This is because they are very moist, and the moisture changes the texture of the cookie the longer they are stored in an air-tight container. Note #2: DO NOT substitute any other type of oats. Use only quick-cooking oats, or the cookies will not hold together as well once baked.)

    Recipe #499459

These cookies are so simple--only 5 ingredients! The best part is they are healthier than your average cookie. They are moist, chewy and crispy-brown on the bottom.

    Recipe #499458

This recipe was an experiment-turned-success. I call them puffy, pumpkin-spice pillows of delight, which are especially delicious served with butter and maple syrup. Although puffy, they are also hearty enough to satisfy the strongest appetite. My kids wolfed them down completely unaware that they were also eating their veggies. Score 1 point for Mom!
