The delicious Middle Eastern/Mediterranean dip of goodness!
My favorite way to eat this is to tear off a chunk of Greek pita, scoop up a heaping helping of hummus & savour, however, many use it as a versatile spread.
This salad is both healthy AND delicious. Not only that but it is quick to make, yields alot, looks attractive and is even tastier as leftovers. Kids love it as it is virtually a dessert salad.
I must give credit to my late Aunt Ruth, from whom I received this recipe.
This recipe was originally from "ENJOY – More Recipes from the Best of Bridge" but has been modified by my Aunt Marcia...who really knows her stuff!
This is the best Minestrone Soup I have tasted, it turned out even better than I could have hoped.
