    Don't settle for store bought! This is super easy to make and oh so much better. Just that perfect amount of heat that makes you want to keep on eating it! (Or, if you prefer it less spicy, just use fewer chipotles). I like to serve this with pita wedges, crackers and baby carrots. It's always a hit at parties and tailgates, and makes a large amount so it's a perfect dish for sharing. Hope you enjoy it as much as we do!

    A main dish salad that is a summer staple in our house. Even our 4-year old loves it! It's refreshing, yet filling. I serve it with crusty rolls and chocolate pie for dessert. Also, use leftover chicken if you have some to make it that much easier. I've also found that this tastes great even without the chilling time. Hope you like this as much as we do!

    This is a wonderful main dish salad that my whole family enjoys. The recipe came from my mother-in-law and it is a summer staple in our house! A very refreshing dish that I like to serve with warm crusty rolls. Great for using up leftover chicken (I've been known to buy a ready-to-eat deli chicken just so I have an excuse to make this!). Enjoy!

    This is super easy and super yummy! I always double the recipe and freeze one batch for later on. Also, instead of buying the ham, pork & beef, my grocery store sells "ham loaf"... I just use two pounds of that and skip the separate meats. I throw everything into my KitchenAid mixer and let 'er rip (I don't even crush the crackers ahead of time). You can also skip the eggs and it will turn out just fine. I serve this with white rice and green beans. It's my 5 year-old's favorite meal!

    This recipe looks as good as it tastes! It started as a Weight Watchers recipe, but I made some modifications (don't worry - it's still healthy!). Even my 4-yr old liked it! This dish is beautiful, nutritious and filling... nice enough to serve to company! Since the chicken breasts were quite large, I had the meat counter cube them into bite-sized pieces so it would cook faster. This might look like a lot of work, but really it's not. I hope you'll give it a try!

The beauty is that you can choose the cooking method that works best for you... stove top, oven, or crock pot--and they are nearly impossible to mess up. Fix and forget!
