    A very light and sweet salad, no oil is used in this recipe. The cayenne pepper gives the sweet dressing a little heat and the lemon zest adds some tartness.

I also made this recipe, using orange concentrate and grated orange zest on top, it was also fantastic. Although, you will need to freeze this overnight, it is the fastest dessert you will ever make.     It's apple time! This is wonderful apple brandy. It's quick and easy. The longer it sits, the better. I just strain it through cheesecloth before serving, if it settles again. I have also used coffee filters for a fine strain, it just takes longer. I have some that is 8 years old and it is a beautiful amber color and very smooth.

    This is an old recipe that my family used during the summer. It is so easy and when you want a pickle, you just reach in a grab one! We use small pickling cukes, about 3 to 4 inches long. Just wash the fresh cukes as you pick them, dry them and add them to the crock.

    This is my favorite and fastest salad I ever made. I got the recipe from "Rachael Ray, 30 minute meals." It's fantastic and you can make it in ten minutes. I get the packaged ready to serve romaine lettuce hearts. Get the hard salami sliced fairly thick and then dice into bite size pieces. Everything else is in a jar and "it's ready to go!"

    I love rice and curry was on the list for the challenge and I wanted to come up with something different. First I thought about adding the pecans into the rice mixture, then I decided to try something different by making a pecan, butter mixture for the top and finish it off in the oven. The addition of maple syrup was added at the last minute. I thought that the sweet would be a nice touch and it was perfect! This can be served as a main dish or side dish or other catagories.

    I love "lamb Shish Kabob" I have never used ground lamb before, so I thought that I would make my recipe based on that. I wanted the lamb mixture to stand alone and came up with idea of making a relish out of tomato, carrot, onion and stuffed green olives. Then I thought that it needed some sauce and came up with the idea of making a Skordalla type sauce out of the Ricotta. That was the tough one!!! I made it several ways and then finally settled on this one. If you use skewers, you can also cook them on the grill, however, you will want to soak the skewers first. I did not have to soak them for the frying pan. This can be used as an appetizer, side dish, Main dish and other categories.

I call it Alice's Baked Chicken in her memory, even though I don't know where she got this wonderful recipe. I always serve this with a tossed salad and bread or rolls.
