This is easy and very light.

    Recipe #448515

This makes a very tasty meal. I like these better then the take out ones you buy from fast food places.

    Recipe #436000

Raw Vegans will definitely like this one. It's really tasty. I didn't follow the directions exact because I wanted to keep my tomatoes and avocado a little on the chunky side so I didn't add them until after the kale was massaged. I also cut back on the cayenne because neither my DH or I care for our food too hot or spicy. According to the recipe this is a good for your heart and cholesterol. I got the recipe from Gone Vegan.

    Recipe #435932

This is a very simple dessert that takes very little effort to prepare.

    Recipe #435931

Wanted to use up some Won Ton Wrappers I had kickin' round in the fridge and came up with this recipe.

    Recipe #435081

Had a problem with the fridge and had my puff pastry thaw on me, so, I'm trying to find ways to use it up fast. This morning I put this quiche together and used a sheet of my pastry for the bottom crust. You need to bake the crust first then fill it thus making it somewhat time consuming. I suggest you do part (or all) of this Quiche ahead of time if you're going to make it for breakfast.

    Recipe #434371

This is my take on a tried and true recipe with some changes. It's delicious and would go great with some home made pasta. I doubled the recipe because we love this sort of dish.

    Recipe #434228

I found this recipe on The Fat Free Vegan site. I did change a few things to suit my tastes. The recipe didn't call for it, but I infused and glazed my cake with some rhubarb syrup. This gave it a nice shine. The flavour isn't overly sweet. DH really enjoyed it and he's not one to eat cake.

    Recipe #434041

This is actually my version of the rice pudding you get in an East Indian Restaurant. I love that stuff but it's always made with dairy, so I came up with a Vegan recipe that I can enjoy anytime.

    Recipe #433901

We have a Vita Mix blender which is essential for this sort of smoothie. Make sure you add lots of fruit to give it some sweetness. This recipe makes a lot so half it if you are the only one drinking it. It keeps about a week in our fridge. You can alter the ingredients to suit your own tastes.

    Recipe #433863

I gave up dairy years ago but with so many food substitutions I haven't had to go without. The vegan cheese substitutes are very tasty and this one is no exception. Remember to disjoint the chicken wings and discard the little tips and save for soup stock. I got the original recipe from Cooks.com. Note: I didn't include the over night times in the recipe.

    Recipe #433372

I think keeping Apple Pie simple is best. This one is as easy as it gets and it always turns out delicious! I used my food processor slicing blade to cut up the apples. It made it so much faster and easier to do. As always, I used my Easy Vegan Spelt Pie Crust: http://www.recipezaar.com/recipe/Easy-Vegan-Spelt-Pie-Crust-196863 for this recipe. It makes 2-9" pie crusts.

    Recipe #433342

I got myself a new popsicle maker and put together an easy recipe for some delicious popsicles. With the heat wave we are having, these ought to be just right.

    Recipe #433241

I have had this recipe for a while and can't remember where I got it. I made this today and used up some left over vegetables I had made a few days ago. I used collards, kale and some tomato in mine. I didn't use dairy but substituted with vegan Monterrey Jack cheese. It tasted delicious. Be creative and use a variety of different veggies in yours too :)

    Recipe #432573

I grilled these veggies on an oven liner that I sprayed with coconut oil. The coconut oil doesn't go rancid when heated at high temperatures.

    Recipe #432260

I don't eat dairy but I love scallop potatoes so thought I'd put something together for myself and DH.

    Recipe #431035

My toaster oven has a fan in it and I love to use it to brown foods. I came up with this tofu recipe yesterday and I was delighted with the results. I served this with pasta and Marinara sauce.

    Recipe #431029

We got a bumper crop of gooseberries for the first time this year. Unfortunately the plum didn't produce much, but I got enough to make this recipe. The colour is really beautiful. I served this over my coconut mint chip ice cream!

    Recipe #431028

Living in New Mexico inspires me to cook local foods. I came up with this hardly Tortilla recipe yesterday. I put chipotle seasoning and fresh cilantro right in the tortilla. We grew the maize in our garden and I ground it up to use in this recipe, and it gives the tortillas an interesting blueish colour. These could even be baked in the oven again to make tortilla chips.
