    The recipe listed on the back of the Spice Apple Bran Muffin Mix bag, with a few additions of my own. I love to tweak recipes to my liking, and I love that I can store the recipe for later here on because it is so hard to remember what I did sometimes! Anyways, my husband and daughter and I all love grab 'n go snacks, and these are very healthy!

    I searched high and low for a recipe that had real cranberries and orange zest in the mix, and it was harder to find than I thought it would be. This is what I came up with, and its pretty sweet, but that's how I choke the strong coffee down. :)

    Straight from the Malt-o-Meal box, I give you Magiiiiiiiiiiic Muffiiiiiiiiins!!!!!!!!! That's how I presented them to my picky, picky daughter (like a television announcer) and it worked, she liked them! Yay! I have substituted Splenda for sugar, to reduce carbs, and I suppose my next trick will be to sneak in some whole wheat flour to replace the white flour.

    These are healthy, filling, have a variety of flavors...I just can't say enough about them. With a cup of coffee or orange juice, they are my perfect quick breakfast or snack. This recipe is from a newspaper that's a couple decades old, a friend (Thanks Mary!) photocopied it for me when I was at her house raving about the muffin she gave me to eat. I hope you love them as much as I do. Also, I changed the flour from all white flour to part white flour, part wheat flour, to make it healthier. The original recipe calls for 2 1/4 cups white flour.

    Use the best ingredients to get the best flavor. That's what I've learned the many, many times I have tweaked this recipe to get it just right. This recipe is generous with the creamy mascarpone cheese mixture on purpose, and I never use all the ladyfingers. I'm still not done tweaking, but it's about time I share the recipe, and I'm including the exact ingredients with their brands. Just so you know, the next thing I'm thinking about is maybe adding flavor to the mascarpone mixture. Let me know what you think, and please include any suggestions. Thanks!

    Martha Stewart-my way. I like using whole wheat flour in my recipes, so I did. I also like using a no carb sweetener for my daughter's sake, so I did. I like to make fluffy pancakes that are good-looking and good-tasting (is that a word?), so I did-but I used Martha's recipe (thanks Martha :). We love these pancakes, so I hope you will too!

    I adjusted this recipe from Ocean Spray so it would be a little healthier for my daughter, who is diabetic. These reminded me more of a scone than a cookie, though. They are not super-sweet, but my six-year old liked them and I enjoyed them with a cup of coffee. What do you think?

    This is the easiest and best jam recipe I have ever had. Whenever I make it, my daughter and I eat it daily until it is gone. Then we think about it daily until I make more. This has been going on for almost 3 years. I had to change the recipe to make it sugar-free, which is why I thought it would be okay to post. (I didn't see any sugar-free recipes) Hope you like it as much as we do!
