Ready, Set, Cook! Special Edition Contest Entry: Try this yummy cheesy zesty potato casserole! It has all of the southwest flavors I love. It's very comforting and satisfying too. It is super easy to throw together, and uses pantry staples most of us have on hand. I really enjoyed it with tuna, but I think it would be just as good Vegetarian or with cooked chicken, cooked ground beef or cooked sausage. I made this pretty mild, but it can easily be spiced up with fresh or canned jalapenos or added red pepper flakes or hot sauce. Feel free to use reduced-fat cheese.

Healthy, Low-Calorie, Lowfat, Low-carb, Flavorful, Vibrant soup. I decided to try to make a Healthy Vegetarian option soup that would be light and refreshing for the Summer. The ingredients in green curry paste were a perfect spicy match for green vegetables. Most soups like this would have coconut cream in them but I didn't want the calories and it is wonderful without it.

This is a wonderful sweet, creamy, cheesy, nutty, fruity delight of an ice cream. The ricotta adds a nice cheesy flavor. The rhubarb is subtle but adds a light tangy fruity flavor and beautiful pink color. The almond extract adds a nutty fruity background for the creamy crunch of macadamia nuts. I feel the honey and zest brought everything together. If you would like a spiced ice cream, a teaspoon of cinnamon would probably be good in it. I was tempted to add a can of crushed pineapple too but I was afraid it would overpower the other flavors.

All of the flavors go so well together...Sweet, spicy, nutty and fresh. It's refreshing and satisfying. I also made it easy by preparing it in the oven. You can make this on the stove top in a frying pan if you prefer. Turkey sausage is great too, I didn't list it or the oblong crusty bread rolls because food.com doesn't calculate the calories for them. The sriracha is optional because it is a 6th contest ingredient.

Flavorful Italian sausage and onion topped with a cloud of creamy cheesy quiche flavored with basil and surrounded by a buttery biscuit crust. The sriracha is optional because it is a 7th contest ingredient, it does tie in well with the Swiss cheese and basil. I wanted to add sun-dried tomatoes but I didn't have any on hand- if you would like to add about 2tbsp of them minced to the quiche, I don't mind. Alternatively, diced fresh tomatoes might be nice sprinkled on top. I also thought of mixing the cooked sausage and onion into the quiche mix. There's just not enough time to try all of the variations but I don't mind if you do. :D.

Who doesn’t like smoky sweet salty flavors? This may be a mix of Mediterranean and Southwestern flavors but they really work well together. Give this as a gift in a basket along with things to serve it with and perhaps a bottle of ground chipotle chile powder. You could include a pretty serving platter and spreading knife as well. You can make tortilla wheels or stuffed mushrooms with this too!

Try this soft fruity pumpkin cake. When I saw the contest ingredients that could be used in baked goods, orange and pumpkin immediately came to mind to tie them all together. What I came up with is extra special for you to bake and give to family and friends during the Holidays. You can easily make this in 12 muffin tins or double it in a bundt pan. For gift giving, mini loaf pans are nice. I’m giving you a choice of 3 delicious toppings: dust with confectioner’s sugar, frost it with neufchatel frosting or ice it with white chocolate icing. Or you can make multiple loafs and try all 3! This gets even better after it sits for a couple of days, the spice and orange flavors come out more.

This is an American version of the Hungarian Dobos Torte. Six thin cake layers filled and frosted with dark chocolate cream, then topped with shattery caramel candy. I used to request this as my birthday cake as a kid because it looks so impressive and I loved to crack the candy topping. It really is more of a grown up cake though, not very sweet. I haven’t had it in ages but it is well worth the work if you want to impress someone.

Created for the Dining on a Dollar contest. At first this was inspired by Senegalese peanut soup which has Asian influences but it evolved more into a South African curry with the addition of dried fruit which is optional if you don't like fruit in your curry. This turned out very flavorful and filling. The peanut butter is an undertone and not overpowering. It's packed full of good fats, fiber and protein. I made this Vegetarian but you could easily add chicken broth and chicken. I made this mild but you could increase the chilies to spice it up. Next time I may try chopped fresh tomatoes and green onions on top. Enjoy!

This is my new favorite pasta recipe. I've made it about 10 times the last few months because it's so easy and so good. It's adapted from a grocery store recipe. It's great even without the chicken. You can add onion to this also by sauteing some in the olive oil before adding the tomatoes. Please use all fresh ingredients for the best results.

I've been going Plum Crazy trying to use up the loads of Santa Rosa Plums from my tree and here's a recipe I came up with using the 1 to 3 ratio I like for Agua Fresca. It's good with Club Soda or Seltzer Water too. I don't understand why "Plum" Juice isn't made and only Prune Juice is Hmm...
