This recipe is based on an article in the San Jose Mercury News by Stacy Diaz. I tried it and didn't need near as much water as the recipe indicated. The dough should not be sticky. This recipe is healthier since it uses oil instead of shortening.
I have had this recipe for over 35 years. It probably came from a newspaper clipping. It has always had rave reviews.
I love it served over rice. These days I go heavier on the seasonings and a few dried chilis for extra heat.
Inspired by a recipe in a Weight Watcher's pamphlet. Easy make ahead breakfast or snack. Like a crustless quiche or a savory muffin. Very easy to vary this recipe with different veggies or herbs. Make a batch and put them in the freezer. 3 points per serving.
