    This recipe is by Mary Lucile Jordan (deceased), County Extension Coordinator with the Etowah County office of the Alabama Cooperative Extension System, and was published in an online edition of The Gadsden Times. NOTE: The original recipe called for 1 cup sugar and that just sounds too sweet to me -- so you be the judge and add sugar to suit your family's sweetness level!

    Finding ways to use a 3.5 pound corned beef flat that I cooked in the crock pot with 3/4 cup dry sherry, the spice packet, 1/2 teaspoon dry mustard, 2 bay leaves, 2 tablespoons black pepper corns, and 3 tablespoons brown sugar for 10 hours -- or you can buy corned beef in your deli! :) This was Inspired from reading Recipe #341361 that I have not tried -- maybe one day, I'll get creative and make this recipe a complete reuben by making a homemade crust containing rye flour! This is a whole wheat-rye-instant potato flakes bread, flavored with chicken bouillon granules, carrots, dried leeks and herbs, with a little sweetness from the optional prunes, or dried cranberries! This is a perfect bread for sandwiches, soups and stews -- Dried leeks was an impulse buy while shopping at a small international market — If dried leeks are unavailable in your area, substitute dried onions, or dried chives in this flavorful bread.

    Fragrant orange marmalade rye bread, with toasted walnuts -- for an added punch of flavor, I sometimes add 1/2 teaspoon cinnamon! Make as one two-pound loaf, if you prefer! :) The first time I made this bread, due to a family emergency, I had to pull the dough out of the machine before it heated for the first rise. I refrigerated the dough overnight, and the next day let the dough come to room temperature and rise, punched it down, and shaped it into two loaves to rise again before baking in my oven.

    A quick basic cocoa frosting that isn't overly sweet -- I like it with toasted pecans! Make it mocha by adding instant coffee granules -- or leave out the pecans, and add the coffee granules, hazelnut extract and 1/2 cup hazelnut spread to make a hazelnut coffee frosting!     Dig out your salad spinner and remove the juice and seeds from tomatoes for a refreshing Summer salad! Cook's Illustrated's Cherry Tomato and Watermelon Salad recipe published July 1, 2008 and in Test Kitchen Notes by email 08-14-09 -- Any good homegrown vine-ripened tomato cut into small pieces would do -- I like grape tomatoes year round! Quarter cherry tomatoes or, if using grape tomatoes, simply cut them in half along the equator (rather than quartering them) to expose the maximum amount of seeds and pulp. NOTE If you don't have a salad spinner, see directions below!

A great one-pot, family friendly meal with an even better kid-approved acronym, SCRAM :) (Salsa, Cheese, Rice and Meat). This is convenience cooking at its best, a ground meat skillet dinner using salsa and taco seasoning for flavor and cooked rice (and optional black beans) to add heft... If you don't have cooked rice on hand, one (8.8-ounce) package brown or white cooked Ready Rice (90 second microwaveable) can be used. To keep this more kid-friendly, leave out the chopped jalapenos! Leftovers can be rolled up in a tortilla for a burrito filling - or plan on using tortillas as part of your SCRAM meal!
