I created this one day when my 4yo was tired of the same old snacks. This was all I had on hand but I was able to put it together and give it a cutesy name so my daughter loved it! This would also make a fun breakfast. You could even substitute raisins for the blueberries. Personally, I am not sure about the blueberry/peanut butter combo but hey, my daughter loves it and that's what counts!
My friend served this at lunch one day and I just had to have the recipe. This has got to be the easiest meal ever. Perfect for those cool autumn evenings, and good for you too. It's quite zesty, chunky, and very filling. I serve with crusty bread dipped in extra virgin olive oil and kosher salt. Heavenly!
I am not usually one for cooked carrots, so I am not sure what possessed me to make these, but I am glad I did. The sauce is sweet and tangy, and the perfect accompaniment to the carrots. There are probably a thousand different ways to make a hot chicken salad casserole, but this is, in my opinion, one of the tastiest and simplest. This recipe comes from "Miss Daisy" King, a Nashville cooking legend who made this recipe and many others famous at her "Miss Daisy's Tearoom" in Franklin, Tennessee. I like to serve this for supper with fresh fruit, hot rolls and lemon icebox pie for dessert.
With all the Snowball recipes on here, I was shocked to see that this one wasn't. This is a super quick and easy recipe that even the youngest child can help with (our 2 yr old neighbor had a grand time)! The perfect Christmas treat! This recipe came from one of the many Gooseberry Patch cookbooks.
This is a good way to introduce flaxmeal into your diet. These muffins are also Phase II appropriate for the South Beach Diet, just be sure to count this toward your daily nut/seed allowance. Believe me, when you have been craving bread, these muffins taste like heaven!
Whenever I prepare dinner for a friend (new baby, death in family, etc.), I always include this yummy pie, along with a carton of Cool Whip. It's the perfect ending to any meal. (Prep time does not include chilling).
