    This is so quick and easy! No more hard to make Chili Relleno for me! This is the only way to go ! I chop up fresh onions, tomatoes, bell peppers and mix with some Cilantro (Gourmet Garden Herb Blend) and Salsa Verde ( 7 ounce can Herdez, sold with the Mexican products in the grocery) to top each serving and serve with chips.

    This recipe was so different we had to try it - Turned out so great we want to share it! Sweet with a Kick - or was it a Kick with a little sweet? Either way it was delish! NOTE: You will need 6 to 8 chunks of cherrywood, applewood, or hickory wood. NOTE:Be sure to set aside 2 1/2 teaspoons of the rub mixture to be used in the mop sauce and the Caribbean Rum Sauce.     I was given this recipe by my friend Ramona while we were at F. E. Warren AFB, Wyoming. She also called it Mock Stuffed Cabbage. I have made it with various ground game meats and ground turkey,too, and it turns out great every time. Tonight I am making it with Crushed Stewed Tomatoes. You can also make this with Spicy-Hot Tomato Juice instead, or Tomato Soup. It is good each way, Ramona said you just use what you have on hand. Hope you enjoy it as much as we do.

    The original recipe came from Cooks.com but I changed it a little to make it more "diet friendly". Sometimes I leave out the "optional" caraway seeds since I don't really care for them that much. I like to use 1/4 cup orange flavored dried cranberries (craisins) and 1/4 cup golden raisins. Be sure to plump whichever you use in the 3/4 cup of water in the microwave just short of boiling before adding.

    The original recipe came from Real Simple. It called for crushed Corn Flakes and cod. Since I don't have the cereal I substituted Panko and no cod, so substituted locally caught Halibut. We used the Parmesan-"Butter" as a sauce drizzled over the fish and the veggies we served with it. We were thrilled with the results.

    Fix this Christmas Eve and have a wonderful Breakfast ready to go in the oven Christmas Morning.
