Orange roughy is one of my favorite fish for its sweet flavor. I eat fish quite regularly and have been trying to get my roommate to eat it too. She actually liked this recipe (which basically means that it's not as 'fishy')!

I threw this recipe together and was so happy with it that I wanted to share! I used a package of a whole chicken that was sectioned into its parts. The flavors come together very well if you keep the skin on the chicken, but you could definitely prepare this with 4 six ounce boneless-skinless chicken breasts.

From Bocuse in Your Kitchen: "This recipe, which is made in many homes around Lyon, was devised to use leftover chicken livers, so as not let them go to waste. It can be made with as few as one liver to as many as six, so if you like chicken livers, don't hesitate to double the given amount. If possible, buy livers that are light in color--they are the best. Fresh tomato sauce is always excellent--the one provided here as an accompaniment to the souffle is a little different from the (more classic French tomato sauce)."

LOVE foil pack recipes...I use them when I go camping for a weekend trip. Really, any fish would probably work well, but I have never tried any other ones. The sauce for this foil pack is from Fiona Haynes' Low Fat Blog. I added some veggies to make it a a complete meal.

Originally Italian, these kebobs are popular in the Binghamton/Rochester/Syracuse/Elmira, NY area. They are great for tailgate parties!! Other options for meat are lamb, pork, beef, and vension. If you use pork, use tenderloin. If you use beef, use a more tender cut so it doesn't come out too tough. Veal, especially, may come out tough unless left to marinate for three or four days. Mixing two or more meats is very tasty also. NOTE: This is a tangy sauce, actually a vinaigrette. It will marinate anywhere from 1 to 3 pounds of meat.

Quick and easy lunch! Prepare dressing the day before, and assemble in minutes. You can seed the tomato if you like, but I like the tomato juices and don't mind if it's a bit sloppy : )

Evidently, lettuce soup is a old time American favorite. I had three bunches of lettuce from the CSA one week and came up with this recipe by combining a variety of recipes I found online. It's actually pretty tasty, a refreshing dish on a hot summer day!
