This is a family favorite. It is a very versital recipe. We have eaten this over noodles, rice and veggies. We have also eaten it plain and used french bread to soak up the broth. I have also added mushrooms to this to make it a bit "different". I've also used fresh garlic and onions for a change. You can also replace olive oil for some of the butter.

    Recipe #364247

I found the original recipe in Quick Cooking. I thought it sounded a bit odd but gave it a try as I was getting tired of grilled ham. We loved it. This was great with mashed potatoes and roasted broccoli. The orginal recipe called for one large onion and 3 tablespoons of veg. oil. I freeze onions so I added one cup of onions and only used one tablespoon of olive oil.

This is a versatile dinner. Nothing gourmet - just cheap, fast and easy. You can substitute what you have on hand. Don’t have kidney beans- I have use cannellini beans or black beans. Only have a ½ pound of ground beef- that works too- just add an extra can of beans. My family loves this.
