    A recipe I got from my mom, with a few modifications. I'm whimpy when it comes to spice, so feel free to add more spice if you wish. You could add a diced jalapeno into the sauce, or more cayenne. You could also substitute flour tortillas for the corn. These are creamy, rich, and make great leftovers.

    Yummy, simple, and great even for gluten eaters! My daughter was very happy to be able to have Broccoli Cheese Soup again! The baking mix I used was a gluten free chicken coating mix. It was a mix of rice flour, brown rice breadcrumbs and seasonings. You could easily substitute this with any gluten free baking mix, rice flour, or your own mix of rice flour and rice breadcrumbs. Adjust your seasonings accordingly.

    This perfectly pink fruit and cool whip concoction is more of a dessert than a salad, but oh so good. SO EASY! Similar recipes are posted, but none with cream cheese,which I think gives it a great rich flavor. It makes a ton, but keeps for at least a week in the fridge. You could always scale down, and could be easily made with fat free substitutions.

    Combined a few different ideas and came up with this healthy recipe tonight. It was so good. Next time I will be sure to whip up some pina coladas to go with it. You can add any veggies you want to the kabobs. Mushrooms and cherry tomatoes would be great. The recipe sounds complicated, but is really easy. I gave detailed instructions in case anyone had any questions, but the process itself is simple. Serve with white rice.

    Super easy, smooth, chocolatey and only 5 ingredients! This hot fudge sauce is great over ice cream, or anything else. It tastes like chocolate fudge in liquid form! It keeps in the fridge for at least a month. But it will be gone long before that. It also uses ingredients I almost always have in my pantry. So it can be made anytime.

    This is a favorite from my childhood. I always use orange jello, cause it's the way mom made it. But you could easily substitute other flavors. Very low fat if you use fat free coolwhip. Keeps well for days, and is great to bring for potlucks. Can be made in a pretty jello mold or just in a bowl and scooped with a spoon.

    This is from my mom. It's a super easy, quick and yummy chicken dish. Can be served alone with a salad, or with rice or pasta. Dont skimp on the poppyseeds, it really makes the dish.

    I dont like the store bought red enchilada sauce, so I make my own. You can use any beans you like, black, pinto, chili or kidney. I have also left the beans out, and spread the tortilla with refried beans before adding the beef mixture. Either way is great. I like to make the sauce and beef mixture the night before, then all I have to do is assemble and bake, and its super easy. This recipe freezes well. Sometimes I like to make a double batch of the sauce, and freeze for later use.

    I had some fresh sweet corn to use up, so made this chowder. It turned out great. I prefer thin chowders, more like a cream soup. You could thicken with flour or cornstarch if you wish. This is best if you use fresh sweet corn cut off the cob, but you can use frozen corn if you need to.

    I am requested to make these all the time. They are easy, and people LOVE them. I developed this over the years to suit our tastes. There are recipes close to this one, but I like mine best! The amount of tortillas you need will depend on how thick you spread the mixture. I like them thick. Zaar wont let me list the chilies, olives and pimentos correctly. But I buy the small can of each. They are already chopped small, so they mix in well with the cream cheese.

    OK, I know there are a ton of recipes out there. But I have yet to find one I like as well as my version. This has a cream cheese base, and bakes up creamy and extra cheesy with lots of flavor. This works well with low fat ingredients also. Enjoy!
