    This is one of Dom Deluise's recipes that we just love and I so needed to post so that others may enjoy it. It's from "On the House with Dom Deluise" website. It's so easy and quick to make.

    This is a terrific recipe for "hooch" party punch. This drink is reminiscent of something you'd have on a booze-cruise in the Islands or something. It's fruity and contains rum and what could ever go wrong with that??? This recipe is great for large crowds or a summer party, picnic or BBQ as it makes a good amount. This recipe is compliments of my dear Sister-in-Law who serves it in one of those big orange Gatorade jugs with a spigot at every summer gathering - think they also whip up a batch to bring out on the boat too... It's good stuff, I'll say that! ** Note: you may see white flaky tiny specs in the punch from the Coco Lopez - that is normal ** Also, you MUST use Sailor Jerry's Spiced Navy Rum, it's what makes it. Sailor Jerry's is a 92-proof blend of Caribbean-style rum with hints of vanilla, lime, cherry, cloves, cinnamon and other spices." You must also use Goya brand nectars as listed below. Enjoy!! :-)

    This is a very easy homemade recipe that has all the traditional tastes of Italy. It's a Penne Rigate dish with Roasted Red Pepper, Artichoke, Onion & Garlic Puree. I happen to love this and so does DH. You have to like roasted red pepper to enjoy this recipe to the fullest extent. It's so simple to prepare as most of the prep is done with a food processor or blender for the puree then you just serve it over your favorite pasta - we like it best over Penne Rigate, but any pasta will do. ** You could also stir in some cooked shrimp or cooked sliced sausage if you want a more hearty dish **

    This is a simple but fabulous recipe for a Dessert Bruschetta using Strawberries. Of course, you could substitute for blackberries or blueberries, or any other fresh berry you like. It is served on Cinamon Raisin Bread Toast Wedges over a layer of Mascarpone. I must give credit where credit is due, I believe this recipe came from an episode of "Queer Eye for the Straight Guy" - I got the idea from there, then made the recipe to my liking as the show didn't provide recipes or ingredient amounts or anything from shows.

    Good dish to please people with. DH loves it, friends & family love it, finally getting around to posting. There are several recipes for Orange Glazed Chicken out there, but this one uses the chicken in bite-size pieces like you would get at a Chinese restaurant rather than a glazed chicken breast recipe. I also have the luxury of having one of those electric fry-grill pans from HSN and that is what I use every time I make this. Serve over white or brown rice or egg noodles. Sometimes I even stir-in fresh broccoli florets that I've steamed while the chicken in simmering. Prior to serving you could sprinkle with toasted sesame seeds if desired.

    A very delicious and moist Strawberry Bundt Cake. You could certainly make this with strawberry glaze or plain sugared glaze if you wanted to, or even just dust with powdered sugar, but my favorite is the lemon glaze topping as it offsets the sweet strawberry flavor perfectly. This cake is very pretty and goes well for brunches, dinner parties, think pink events, etc. Also, the recipe is for a Bundt cake, but you could easily make a layer cake using two 8" round cake pans instead then use a frosting. ** Note: my oven is gas and cooks quickly, you may need to cook a little longer depending your oven, but basically cake is done when toothpick comes out clean.

    I love these types of desserts. They are easy, delicious, and great for summer. This one comes from my girlfriend Doreen, but I think she used cool whip last time instead of of the dream whip. Also, you can make this with blueberry or apple pie fillings or whatever you like.

    These are a very easy thumbprint cookie to make as they use a packaged cookie mix. They look pretty around the Holidays. You can use green drizzle (made with the white chocolate chips in recipe with added green food coloring) with the raspberry jam & they look great or even use colored red or green sugar. You can also use apricot or any other flavor jam you desire in making these if raspberry not your thing. Got the recipe from Shoprite website and have been using it ever since.

    I've made these for a long time. These Italian eggplant balls are a great substitute for meatballs. Use them just like meatballs, in sauces, in recipes, as a side dish, etc. They can be a vegetarian substitution for many dishes. I like these best fried because I like them crispy. You could bake them instead. They go great "parmesan style" too, in a casserole dish, topped with sauce, parmesan & mozzarella cheese then baked...

    These are very easy chicken & cheese burger patties. You can use either ground chicken or turkey meat. These grill up great outdoors on the BBQ or inside on the indoor grill. My husband and I love serving these on a bun coated with BBQ sauce & a handful of "French's" fried onions and we top them with a slice of american cheese too - they are perfect that way. PS: These are super to freeze, I make a fresh batch of either chicken or turkey & always freeze about 6 or so patties. I wrap them individually in Saran Wrap, then put all 6 either in a tupperware container or a large freezer zip-loc bag as in photo.

    Great little summer dessert concoction. Although it's called salad, it's really dessert. This is a great dessert for summer. Goes great at picnics and BBQ's - I have one of those "salad on ice" bowls from QVC so it stays nice and cool and doesn't get runny. Also, prep. time is about 5 minutes but I didn't include a chill time as it varies.

    These are delicious tiramisu cupcakes. They are relatively easy to make as they use a boxed cake mix. Read recipe in entirety first - it sounds more complex then it actually is. You can decorate these to be quite elegant & fancy in presentation for Brunches, Bridal showers, or whatever suits your needs. These sell at gourmet bakeries, coffee shops & cafe's for a pretty penny. Note: I do use mascarpone to make these as that is more traditional, but you could substitute with plain cream cheese if needed. Also, I do use cupcake liners because I think they present better. Lastly, it's best to prepare mascarpone filling & chill about 4-6 hours in advance or night before. FYI: You can fill the cupcakes by using a icing decorating (piping) bag filled with the mascarpone filling or use an old fashioned ketchup or mustard plastic bottle with nozzle point tip << yes, those ugly yellow & red things :-) *** Update: some of you contacted me about skipping the pastry bag step, that's completely fine, what you need to do is leave room when filling cupcake wrappers by not filling all the way, after cupcakes are baked, you poke the holes & do the liquid coffee over top of poked cakes, then just top with the mascarpone layer (make sure it's chilled well as it thickens) then just use the cream cheese frosting on top of that & top with chocolate shavings.

    This is a great tasting tomato, olive and fontina frittata. This is a super dish to make for a Sunday or Holiday Brunch or even a dinner party. I do most of the prep for this in my food processor/mini-chopper (for the tomato, pancetta, scallions, & olives). Recipe doesn't include it, but you could also add some Italian peppers or cherry peppers to kick it up a bit.

    This is just a quickie chicken casserole dish that we really enjoy. I know there are many chicken casserole recipes out there. They are all pretty good. This one is made with a Pepperidge Farm Stuffing, bread crumbs, & grated cheese topping. If you like a creamy version of a casserole, stir in 4 oz. sour cream & 4 oz. softened cream cheese before cooking. ** Also, I quickly cube chicken breasts & cook with some olive oil & a full tablespoon of refrigerated chopped garlic in saute' pan then drain off the fluid & add it in.
