A southwest twist on stuffed peppers. This is a favorite of the girls I cook for. I make it healthier by using ground turkey but beef works just as well. It's also easy to change to personal tastes. Add a salad and you have a meal.
This was created because of friends in Minnesota serving it when we stayed with them. We couldn't get it in Texas so I tried to duplicate it & this is the result. I like the fact that it's made without oil. It has become a Theta staple. The fruit & nuts can be changed to personal preferences.
