While Matt was deployed I played around with this recipe and I just knew he would love them as much as Riley and I did so I finally made them this past weekend. The verdict? Quoted - “I demolished them.”
Very easy, just top the batter with the jam and it bakes into the cupcake making a yummy little donut!
Note: there are two measurements for the sugar. When the directions call for the sugar, add both measurments at that time.
Also known as frijoles refritos. Absolute must with any mexican dish. Serving suggestion, topped with fresh Cheddar and tortilla chips. Please note that the cook time does not include soaking the beans overnight.
I've made this recipe both with hamburger and with veggie crumbles, and both ways it rocks. The only difference is that when I use veggie crumbles, I saute the onion first. With hamburger, I brown the onion and beef together. You can also use fresh mushrooms of your choice instead of canned!
