    This is my mother's recipe. It is such a versatile recipe. I often use quinoa instead of rice and it turns out beautifully. You can use any vegetable you like (eggplant, tomatoes, zuchini, etc..). Just remember the formula, for every vegetable use 1 1/2 tbsp of rice.

    Bison is a very low fat meat and therefore can easily be overcooked. I add a lot of vegetables to keep the meat moist. I also finely chop all vegetables in the food processor to hide them from my toddler.

    My toddler son is not a big meat eater so I make this soup at least once a week. When I add a whole grain, either when cooking or at serving, he gets a complete protein. Make sure you add vinegar (and even some more olive oil) when serving....it really makes the flavours pop!
