This is my version of mole sauce. It can hold its own against the mole at our great local Mexican restaurant. I usually double this recipe, but that's just me. The original recipe calls for 5 TBSP(yes, 5)of chili powder. I cut it in half, but you can take it from there. And don't judge the taste until you add the chocolate. It's just not done until you finish this step! Serve it over good chicken, over enchiladas,or burritos. I think it is good with lots of things. I served it the other night over leftovers from canarygirl's Chicken Verde, and it was superb!(Her recipe stands on its own as a great dish, I just enhanced my leftovers! Thanks, canarygirl!)
I made this cake for an Autumn Harvest Party we had. It was a huge hit. It's very moist and very delicious! But I don't think you'd have to wait till autumn to make it, it would be good anytime! And it is really easy to prepare!
This is my favorite fruit crisp topping. It makes alot, and I love to keep it on hand for a quick dessert. My family LOVES fruit crisps, and I can whip one up in just a few minutes with this in my cupboard. Sometimes I'll use pie filling mixed with fresh fruit for a change. This is a recipe I got from a magazine. It is, without a doubt, the best salad I've ever had! Maybe some of you will think so, too! It looks like alot of ingredients, but it's so quick and easy to throw together! My husband requests this ALL THE TIME! The dressing is really a nice mix, too.
This a great variation on regular pumpkin pie. The addition of nuts in the crust is so tasty! You can cut it in large squares, but sometimes I cut it into smaller ones to bring to a potluck, or for a buffet. The first words out of tasters mouths are always "Oh, this is SO good!" (One hour for chilling is added to cook time.)
I called these Foothills muffins, because they remind me of muffins from a great breakfast place in the foothills of a small town near me. The yogurt makes them really moist. You could substitute another berry if you wanted to. Delicious!
This is the lightest, most moist cake! And delicious, too! I always get requests for it, and the recipe. You can change the flavors of the cake, the Jell-O, and the pudding, too! How about a blue Jell-O cake, and vanilla pudding in the fosting, tinted with pink with food coloring for a baby shower? And with sugar free Jell-O's and Lite Cool Whip, not much guilt eating it, either!
This is my version of my spanish Mom in law's Chicken and Rice. Hers is good, but I like mine better! Really easy and quick to throw together, and all the ingerdients can be kept on hand! And it's one of the few dishes my kids will eat!
