The recipe I'm listing here is for a delicious bean chimichanga done in 10 minutes--a healthy, fiber, nonfat meal. Serve with favorite salsa. Use any cheese you want or spice it up like you want. I used corn tortilla here as it adds an added crunch. Most restaurants use flour tortillas--use your preference.

    Recipe #261267

My favorite sandwich from picnics in Georgia. We didn't trust meat in the heat, so there was little choice. Most chose pbj, but I had tried this at another picnic and was in heaven. It was made with Miracle Whip salad dressing. I have tried it with mayo, but it loses something, so I say if you want the taste, use salad dressing. I have eaten this many times without the cheese and it was just delectable.

I spent many a night at "Henry's Fish and Grill", one of the top restaurants in Mississippi, and had these wonderful hush puppies with fresh caught bass that we would catch and the chef so graciously prepared. It wasn't until my cousin married one of the chefs that I ever got the recipe. I never gave it out, but now they are sadly no longer there and I want to pass on this beautiful recipe. I hope you enjoy it--and Chef Henry, this is your recipe.
