This is my attempt at low carb. I add more than 1 pepper because I like it spicey. You can replace the pepper with 2 to 3 tablespoons of chopped canned chilies or chopped canned chipotles en adobo or omit altogether. Top with salsa if desired.
I like the taste of the roasted peppers. We like ours super hot so we leave in most of the seeds. All the chopping can be done by hand, that's how I usually do it so it looks more like a homemade salsa. The amount of tomato juice from the canned tomatoes you used will determine how think the final salsa will be.
I have included how to make toast points because that's what I like this stuff on. It got it's name from pulling me out of many rough situations when I needed to bring something to some function and had forgotten.

This is my family's favorite dish that I make. And it is sooo easy! It is enough for 6 adults. Or 2 adults and 2 kids, with more than enough to have for dinner the next night, and then lunch for 2 kids the next day. It's also good if you leave out the chicken.
This ia an adoptee that I have tried and it really is a tasty dish. Halves easily and is just full of flavor. Of course you may adjust the amount of hot peppers to your liking. I browned the meat well before I added it for extra flavor.
