Original recipe is from Rachel Ray's Everyday Living magazine. High protein, quick cooking side dish. I added garlic to mine (as I add minced garlic to just about everything). It is recommended to serve this warm, but I like it chilled as well.

An old family favorite from our time in the south. Even my husband, who is picky about his greens, enjoyed this recipe!

Not the most "healthy" recipe, but it's very tasty! Very creamy and rich enchilada chicken casserole. If you prefer the more traditional rolled enchiladas, all you have to do is place the chicken and sauce mix (approx 3 Tbsp) in the center of each corn tortilla, roll, and place in casserole dish with the seam side down...then cover the rolls with remaining sauce and cheese. I was feeling lazy, so I did it casserole style.

I grew up in a household inspired by southern cooking. I made these one night for my husband and served them with cornbread and collard greens. It takes a while to cook, but you don't have to stand at the stove the entire time.

Lamb leg steak marinated in spiced red wine. Very good by itself or served with mint jelly.

A nice casserole-style dinner made of artichoke hearts and chicken. I experiment in the kitchen often, and this one is one of the ones that has been requested again and again. I use gluten-free bread crumbs and it turns out well that way, but regular bread crumbs could be used as well. I also use gluten-free soups (as I'm allergic), but regular cream of mushroom soup would work well.

A new experiment that came out well enough that I thought I'd share it! It is completely gluten-free and easy to assemble. A wonderful combination of eggplant and ground beef.
