This is a tasty vegetarian dish. You won't even miss the meat! You can substitute any type of Southwestern-style dressing for the 1000 Island. I slice avocado to serve around the plate. This dish can make a very nice presentation.
*The cheese can be left out and a vegan dressing can be used and it will still be delicious!
I came up with this recipe after Dominick had a craving for egg salad and he was pleased. The fresh dill really gives this egg salad great flavor. I used Hellmann's Canola Oil mayonnaise to make it a little healthier. You can also either use regular or dijon mustard (they both work well). Serve as a sandwich on your favorite bread.
This is a Whole Foods Market Recipe I had laying around. It is a healthier version than most pumpkin bread recipes. I use half pecans and half walnuts. I also use almond milk in place of the regular milk. It's not a super sweet bread so just be prepared for that. :)
I made this as a side dish for Thanksgiving this year. Everyone thought it was really good. The nutmeg gave it a unique flavor but you can also omit the nutmeg and try using other spices (rosemary, thyme, sage, etc.) if you like. I also made homemade pie crust. YUM!
