This recipe is from "Miami Spice", a cookbook I received from love4culinary in a Zaar Cookbook Swap. The recipe calls for 8 ears of corn. Perfect to feed my family and have two to three ears leftover to make "Grilled Corn & Roasted Garlic Flan" (from the same book). I'll post the latter if it turns out. : )

    Recipe #64978

This recipe is from my friend, Tadd M. Gunther, Executive Chef at the Green Valley Spa in St. George, Utah. When they came out with their new cookbook, I asked Tadd if I could share one of the recipes, and did he have one he particularly liked. This is the one he suggested. Enjoy!

This is my delicious version of an Atkin's recipe I found. We didn't have leftover's the first time. The second time, I doubled the recipe. The leftover's heated in the microwave taste like a yummy fish stew.

Decadent! Found the recipe on www.justvegetablerecipes.com. The only changes I made were to include gf directions and to rewrite the recipe to make it easier to understand. This is a keeper! Kids may not even know they are eating a vegetable. : )

A recipe from my early cooking days. I still enjoy it, but now I use fresh garlic, onion, nutmeg, and Parmesan-Reggiano. This can be a vegetarian main dish or side dish.

Easy and low fat to boot! : ) I don't remember where I got this recipe, but I have written down here with it: Per serving: 312 calories, 5g fat, 349 sodium, 64 mg cholesterol, 46 carbs, 19g protein, and 251 mg potassium.

This recipe is slightly altered from Holly Clegg's "Meals on the Move", so it's meant to be fast and healthy. I only changed the garlic and basil, since I've learned to appreciate fresh ingredients. This is tasty and she says it serves 6. Maybe so, but unless it's an appetizer, I say 4 for a light lunch with some fruit on the side. Looks low carb to me, too.

I used China Moon Double Chicken Stock (posted by Mean Chef here at Zaar) for this today. It is most luxurious! : )

Credit goes to Melissa Diane Smith, author of "Going Against the Grain" for this recipe. Her book is filled with interesting information, a good read! Not to mention all the good recipes in the last part of the book! : )

This recipe from "More from the Gluten-Free Gourmet", by Bette Hagman is being posted by request. I have not tried it, but I know somebody who swears by it and her husband who has no dietary restrictions agrees. If there is one gf pasta recipe to try, this is it, because as far as I know, there are no commercially made gf wide egg noodles on the market.

I love this! I found it in Martha Stewart Living April 2002.

A delicious Bon Appetit salad. Prep time does not reflect marinating time.

    Recipe #57964

This is one of the ways my husband prepares salmon. He's hard to nail down, because he just cooks without a recipe. I got it this time, due to my excellent skills of observation. LOL I put "0" for cook time because that will depend on the fish, and, of course, the marinade isn't cooked.

This is so quick and easy to make, I usually make several loaves and freeze two. This is from Roben Ryberg's "The Gluten-Free Kitchen", the book that saved my sanity when first learning to bake gluten-free! : )

Three years ago, I went on a hunt for a jambalaya recipe. So many to choose from. Here's another one to choose from now. : ) This doubles easily and freezes well. I made this again last night to see if it was as good as I remembered. Verdict: Most Definitely!

Posted for a request, I did make this once for fun. You have to ask your butcher for this cut well before St. Patrick's Day, before they turn them all into the prepared corned beef's.

Another from F & W to use as a dip, cracker topping, or sandwich filling. Yum!
