I tried a few carrot muffin recipes, none of them were able to satisfy my picky-eating son. I finally combined a few different recipes, kicked the spices up a knotch, and came up with these. He's happy, he can take them to school for lunch as they are nut-free.

    Recipe #352483

Something a little different when you aren't in the mood for a tomato sauce. Can use to serve over pasta or rice.

    Recipe #281686

These are an easy cookie to make, and very popular with the kids. When you top them with a glazed cherry on top, they make a great holiday cookie.

    Recipe #201126

One of my brothers refers to these as "300 lb. potatoes". Because if you ate as much as you'd like to, you'd be 300 pounds. These are not for the diet conscious. These go great with a meat that doesn't have gravy.

    Recipe #145831

This dish started out as an easy quick meal for myself. But it is really good. Don't be shy with the pepper and you'll love the results.

    Recipe #98030

I came up with this by playing with my method for chicken parmigiana. The idea came from a restaurant veal dish that had green peppers. I've taken it a few steps further. This is also a delicious recipe for veal.

    Recipe #95325

This is something I came up with to have a restaurant style pasta dish at home. You can vary the sauce used, in order to change the recipe. It also works great with a red pepper sauce or an alfredo sauce. I used to use white mushrooms, but the potabellos really brought it to the next level.

    Recipe #95253

A simple marinara sauce that is really good. It makes an excellant sauce for other recipes like lasagna and other pasta dishes.

    Recipe #95168

This is a combination of several recipes with a few of my own twists thrown in. I was really happy with the results.

    Recipe #89055

This is one of my wife's specialties. With garlic bread, Caesar salad and a bottle of wine it makes a great meal. When we first living together, she would always make it as the beginnings of an evening of passion. It never missed, I always fell into her trap.... Still do (when the kids allow it)

    Recipe #49663

This came from a Mennonite recipe book that I puchased at a harvest fair. I vary it from time to time by adding wine or beer to the simmering pot. This stew really tastes great on cold blustery days.

    Recipe #47998

These ribs are easy, and fall off the bone tender. A great way to enjoy ribs during the winter.

    Recipe #45959

I don't know if this is the real "Essence of Emeril", but it is a great spice mixture that can be used for all kinds of things. I actually found it sitting on the photocopy machine at work.

    Recipe #45369

I make this when my wife is in need of some comfort food. It's one of her favourites. I use all frozen diced vegetables to make the prep time quick and easy. This is really a simple way to make this dish.

    Recipe #41662

It sounds crazy, but it's a terrific way to cook salmon. The method is over 5000 years old developed by the Haida Nation of the pacific northwest. The marinade is my own favourite but you can have it whatever way you want. The cedar doesn't catch fire when it is soaked with water for a day, but the bottom will char. The flavour it gives to the fish is out of this world and done to perfection. If you're looking for something different, easy, and melt in you're mouth orgasmic, give this a try. You won't be disappointed

    Recipe #36196

This is a real favourite with our friends. It simply disappears so fast I usually double the recipe. You can vary the amount of salsa to your taste, as well as the heat level with picante salsa.

    Recipe #32496

These are the beans my French-Canadian mother used to make. She never measured anything making these so I've estimated the amounts. These taste great with fresh bread. A good dish to keep in mind for pot-lucks. You can add pork or weiners to it if you like. Bacon strips on top work well.

    Recipe #29785

A real easy one to make when you can't think of anything to have. My mom made this to stretch the budget, but it tastes great. My brothers and sisters all still make it and love it.

    Recipe #29779

This recipe comes from my mother with a few revisions. Even she agreed that they were better. Once you make these, they are "the only cabbage rolls" that you'll want from now on.

    Recipe #27027

I came up with this because my wife loves everything creamy, but has been told to cut down on the dairy. The potatoes break down and give a cream soup feel and taste. It's very simple, hearty and healthy. It's also easy to come up with variations. A food processor makes for easy preparation
