A hearty chili type dish that's a meal in a dish.
This will feed two hungry adults as is, or you can adjust
the amounts and make enough for a crew ! Put it in a slow cooker
and let it simmer on low for several hours. If you aren't counting calories or fat, serve with Sour Cream, shredded Cheddar Cheese, or even a dollop of Guacamole. I add the hominy later so it doesn't get mushy. This is similar to chili, you can add what you like, or spice it up if you like things hot. Try adding a can of Rotel to below recipe.
