    Fast and easy, as no precooking of macaroni is required. Lower fat items and no salt added make this dish somewhat better than others for those watching fat/sodium intake. Regular or low fat, the choice is yours. Kids seem to like this one. It's good served with a green vegetable such as broccoli. Salt & pepper to taste if desired.

    A good way to use up some of those Summer "zukes" that seem to multiply. This has assorted veggies and great fresh herb flavors. Great for's not the usual vegetable side dish.     This recipe is for Chicken Salad as was served at Willow's at The Phoenician Resort in Scottsdale, AZ. My clipped recipe from Omaha World Herald dates to 1990. The salad is different with dates, nuts and jicama, in a lime-mayo dressing. It's a very good warm weather dish. Cook and prep times do not include chill time.

    A traditional New Year's Day dish... legend has it that eating Black Eyed Peas on New Years Day brings good luck. After reviewing several cookbook recipes full of salt and fat I came up with a somewhat healthier version by cutting back on amount of sausage and using liquid smoke to "fool the tastebuds" Ground Chicken or Turkey Sausage will work as well. Seasonings can all be adjusted to personal preference. Place in covered skillet and simmer on low until heated through and spices lend their flavor to the dish. I have put this in a crock pot to heat and serve later. Serves 2 really hearty appetites or 4 smaller portions.

I like to use 2 cans of Clams when making this recipe. Prep time does not allow for bringing Cream Cheese to room temp to soften.

    I found this recipe in a Skinner Macaroni cookbook. It's a nice recipe for those of you who don't want a mayonnaise based recipe. The cottage cheese gives it a new twist, tho the recipe dates from the 60's.A little chopped red pepper is a nice addition. Great for a summer lunch or picnic, it's also good served along with cold boiled shrimp. I've included the original salt amount. A much smaller amount will do if you watch sodium intake.Cook time includes time for chilling.

    A hearty chili type dish that's a meal in a dish. This will feed two hungry adults as is, or you can adjust the amounts and make enough for a crew ! Put it in a slow cooker and let it simmer on low for several hours. If you aren't counting calories or fat, serve with Sour Cream, shredded Cheddar Cheese, or even a dollop of Guacamole. I add the hominy later so it doesn't get mushy. This is similar to chili, you can add what you like, or spice it up if you like things hot. Try adding a can of Rotel to below recipe.

Add anything additional in the way of minced vegetables that you like.I sometimes add grated onion, or Dill pickle juice instead of sweet pickle juice. If you count calories this can be made with Sugar Free Jell-O The recipe calls for Hunt's brand tomatoe sauce (there is a difference) Cook time is chill time Enjoy !
