I was given this curry recipe years ago by a local Indian family. It is so adaptable and so delicious that I make it all the time with whatever ingredients I have. In the ingredients I have specified beef (due to the inflexibility of RecipeZaar!) but you can use beef, lamb or chicken, chickpeas or vegetables or any combination of these. Casserole beef cooks beautifully, it takes about an hour. Chicken with coconut cream is also lovely. Often we have it as a vegetarian/vegan curry with chickpeas and vegetables. Serve with rice, yoghurt and naan bread if you like it!

This makes a fabulous pudding - warm or cold with cream or ice cream, or a luscious afternoon tea cake. A family favourite that my kids ask for often.

This is a cakey gingerbread that you can cut slices of like a loaf. It is a family favourite, and lots of my friends have asked for the recipe. Yum!

This is a really tasty meatloaf - especially if you like things a little spicy. It came from my mother-in-law, we have it often. You need to cook it in a oversized tin, so you have room for the sauce.

This is so easy and SO delicious. It's best made with fresh apricots (though in a pinch I have used tinned apricot halves, well-drained). I have lost count of how often I have made this, and of how many people have complemented me on it!
