I am posting this to serve with Easy African-style peanut chicken. I am a single mother with a disabled child. Since I work and go to college, I need easy, delicious dinners. This isn't really authentic but a friend of mine is in Africa and sends me recipes to "tweak" for my ease of cooking!
Growing up extremely poor and living in the Midwest, my mother had to get creative with a family of a military husband, 5 sons and 4 daughters. She dubbed this "Cowboy Food". I still love this to this day! Maybe it's just that it's so comforting to me!
I love a wide variety of cuisines, and I have a fondness for African foods. I am a single mother with a multiple handicapped brain damaged child. I also go to college full time and work in Oncology, so I am always needing something good but fast! I have a friend in Africa who sends me recipes and I kind of tweak them for ease, shall we say. I make this with my African style rice (look for it in my recipes!) Enjoy!
My mom made this every Thanksgiving just because I was the picky little brat that I am. (Still am!!! LOL) I hated and still hate regular pumpkin pie and this is one I will eat!
Extremely simple, but I like it! Always have and always will. Not everybody likes it, but I do!!!
I can't remember exactly where I found this recipe, but I have done a few changes to suit my tastes but I love really enjoy it as does my daughter. I currently live in Arizona and I have a brother in law who is from Mexico and taught me a very good and easy way to make authentic refried beans. These are my favorite! I can't stand canned refried beans. I hope you enjoy!
I found this in an issue of Clean Eating and have only slightly adapted it to my liking. I am not a fan of couscous, so I used Jasmine Rice instead. This recipe is so easy, light, quick and most importantly, delicious!
I found this recipe in "Real Simple" Magazine in the fake, don't make it section. I love this and some times I just get a jonesing and need more!
Normally when I make this I just eyeball the seasonings and go with it!
